Loaded Potato Soup

Old fashioned goodness, thick and creamy potato soup will warm you up and fill your belly.

Ingredients

  • 6 medium or large potatoes
  • 1 large onion
  • ½ pound sausage
  • 6 ounce bacon bits
  • 1 cup sour cream
  • 8 tablespoon butter
  • 1 cup shredded cheddar cheese
  • 1 tablespoon liquid smoke

Instructions

  1. Dice potatoes into half inch cubes.
  2. Place potato cubes in large pan and add enough water to just cover the potatoes.
  3. Bring to a boil and simmer until potatoes are fork tender.
  4. Meanwhile, in a skillet, brown the sausage and onions together.
  5. When the potatoes are fork tender, add the remaining ingredients and simmer for 15 minutes to heat through.
  6. The cheese should be melted.
  7. Stir frequently to prevent cream and cheese from scorching to the bottom of the pan.
