Tea Time Banana Tea Muffins
These banana tea muffins are nearly the most perfect thing I’ve had with my afternoon tea! They are full of flavor, just filling enough and easy to bake!
If you’ve got bananas on the counter going past the eating “as is” stage, then you need this recipe. It’s a great way to use those bananas and treat your family at the same time.
I buy bananas almost every trip to the grocery. I am a picky banana eater, however. I like them just turned yellow, with no brown on them.
My husband is a lot more forgiving and tends to eat the majority of the bananas. He doesn’t mind the brown spots. Yet, once there are more brown than yellow spots on the fruit, he’ll pass them by.
That’s when I know it’s time to get baking!
I’ve often made banana bread with the brown bananas. But this time I wanted to try something new. I’d been reading a vintage cookbook titled 1001 Muffins, Biscuits, Doughnuts, Popovers, Fritters, Scones and other Quick Breads.
There was a super simple Banana Tea Muffins recipe that caught my eye, so that’s how I used up the recent batch of bananas.
These muffins are more dense than the ones I buy at the bakery. I was a little surprised, but it was a nice change. I felt like I was really biting into something. Sometimes, you know, you just need that sensation of chomping down into a baked good. This was almost like a soft cookie in texture.
They baked up a nice light golden brown. I didn’t dust the tops with coarse sugar or a cinnamon-sugar mixture. That would make for some very tasty banana tea muffins. Another perfect topping would be a drizzle of vanilla glaze … I think I need to make some more muffins!

Banana Tea Muffins Recipe
Ingredients:
Flour, sugar, baking soda, baking powder, salt, eggs, oil and bananas.
Recipe Directions:
Mix and bake … it’s almost that simple!
Banana Tea Muffins
Ingredients
- 1.75 cup flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ¾ tsp salt
- 1 large egg
- ½ cup oil
- ½ cup sugar
- 2 lg bananas
Instructions

Preheat oven to 400 degrees Fahrenheit.

In large bowl, combine dry ingredients.

In a medium bowl, beat the egg until fluffy. Add oil sugar and bananas.

Add wet mixture to dry ingredients and mix until just combined.

Fill greased muffin tins ¾ full with batter.

Bake at 400 degrees until toothpick comes clean.
