Taco Sloppy Joes
Sloppy Joe sandwiches are a perennial favorite in my family. I should say, they’re better than that, because it seems like we eat them at every other family gathering! Taco Sloppy Joe are even better!
When I was very young, my mother used a recipe for Sloppy Joe that centered around an envelope of seasoning that she bought in the spice aisle. Then, when I got to middle school or so, she changed her recipe and used a can of sauce that she bought in the aisle next to the spaghetti sauces.
Either way, we made pots full of the sandwich mixture, using up to five pounds of hamburger. When are feeding seven people for supper every night, you need a lot of sandwich fixings. I’m sure mom was glad she only had one son during those years.
I’ve talked with friends who’s recipe involves raw tomatoes, diced onions and a variety of spices measured out into individual portions.
I have to say, that in all the sandwiches I’ve eaten, I have yet to meet a Sloppy Joe that I disliked.
This recipe puts a Tex-Mex spin on the classic sandwich.

Make It a Meal:
Serve with other Tex-Mex dishes such as re-fried beans and rice. Add a salad or potatoes to mellow out the spice in the sandwich.
Goes really well with Gooey Cheesy Potatoes!
This recipe can be spiced up as much as you’d like it to be.
Variations:
Use ground turkey or venison instead of ground beef. Add a splash of hot sauce to the mixture.
Leftovers are easy to keep, and taste even better the next day. Place in an airtight container; allow meat mixture to cool before placing in the refrigerator. You can freeze sloppy Joe mixture up to two months. Thaw in the fridge and reheat on the stove top or in the microwave.
An additional use for the leftovers that my family loves – add to nachos with some hot pepper slices, cheese and sour cream.
This super easy recipe is great for nights when you do not have a lot of time to spend fixing supper. It is also really easy on the budget, since you can get a fair number of servings from the single recipe.

Taco Sloppy Joe Recipe
Ingredients:
2 lb. Ground Beef
6 oz. Tomato Paste
1.25 oz. Taco Seasoning packet
Directions:
Using a large skillet or pan, brown the ground beef. Add the tomato paste and taco seasoning packet. Mix well.
