Super Easy Key Lime Pie
Our favorite summer dessert is Key Lime Pie. Over the years we’ve tried many recipes, looking for the perfect blend of creaminess, sweetness and tartness. This super easy key lime pie recipe is the one.
Fans of key lime pie know, there are many ways to make a great pie. There’s also a lot of debate on fluffiness, custard and color. Traditionalists use the key limes, tiny limes of a specific variety. Non Traditionalists use any lime they can get their hands on.
Staying out of all the debate and trying to avoid controversy, I was looking for a pie that came together in short order and was full of creamy tart flavor. I’m no connoisseur of limes, but I suppose the traditionalists have a point – their limes have a unique flavor.
Living in north central Ohio, I have to make due with the limes I can find. Sometimes I get lucky and my grocer has key limes in stock. Usually, I’m working with regular limes. That was the case when I put this pie together.
You can see from the lime slices I used as garnish. They are not the tiny key limes. They were plenty tasty tart, however and did the trick.

The color of this key lime pie is a light golden, cream shade of ivory. Key lime pie isn’t green like the outside of the lime. If you grate the rind of the lime and mix the zest into the pie mix, you’ll have tiny flecks of green floating around.
I suppose you could add food coloring if you wanted a more brilliant green shade to your pie.
This recipe is so super easy, all you need are a few ingredients and about 15 minutes. This is a recipe even my husband would attempt. He likes good food, just doesn’t like the fuss involved with some recipes.
Truthfully, this is a recipe any beginner can make and feel like a success.

Make It a Meal:
Serve this after a light supper of salad and grilled fish, you’ll feel like you’re in the Keys! We also like it as dessert after #TacoTuesday. Perfect when you need something light to finish the meal.
Variations:
Make your own graham cracker crust. I used a pre-made crust for simplicity’s sake, but honestly a homemade crust isn’t really that hard. If you’ve got your grandma’s special recipe, use it!
Top with whipped cream if you’re looking to fancy up your pie. Again, a store bought whipped topping is simple, but home made whipped cream is something that won’t go wrong!
