Strawberry Trifle
Springtime means strawberries, and how we love them! Strawberry trifle is the perfect way to serve strawberries and get that burst of spring freshness, while stretching a pint of berries to serve the whole family.
Trifle is a super easy dessert to prepare, tear up cake, spoon pudding and build layers … that’s all it takes! It’s also a great way to rescue a broken cake!
What to do when my cake breaks?
When life hands you lemons, make lemonade. When your cake breaks, make trifle. That really should be one of life’s best quotes.
I found a beautiful Bundt cake pan at a thrift store. It was a truly lovely shade of pastel pink and shaped like a heart. It had a lot of ridges to hold the icing and I couldn’t wait to bake a beautiful Valentine cake!
I baked a strawberry cake in this great pan. Before I added the cake batter, I oiled the ridges and valleys generously. However, my efforts were in vain, because when I turned the cake out, it broke into several large chunks.
The solution: instead of tossing the cake into the garbage, I broke it into smaller pieces and added fruit, pudding and whipped cream for a lovely pink and white trifle.
Variations:
You can make trifle with any flavor cake. The combination of cake, pudding and fruit is truly endless. I like pound cake, vanilla pudding and tropical fruits the best!
Chocolate cake, butterscotch pudding and chopped up Butterfinger candy bars is always a popular favorite.
Make It a Meal:
Trifle is such an easy and crowd pleasing dessert! You can make it fairly healthy by using a lot of fresh fruit. Or you can totally disregard the diet and create a decadent creation!
Some of my favorite trifles: Cherry and Lemon, Fresh Fruit, St Patrick’s Day

Tips:
Trifle is not only a great way to rescue a failed cake, but it’s a good way to prepare an economical dessert.
Often, fresh fruit can be relatively expensive to serve as a dessert when you’re feeding a large group of people. Trifle is a good way to stretch that fresh fruit by incorporating the cake and some creamy filling such as pudding or whipped cream.
