Strawberry Boston Cream Cake
When spring arrives and you’re looking for a seasonal dessert, this strawberry Boston Cream cake fits the bill.

I found a strawberry cake mix on sale last week. I loved the pretty pink color of this cake and the sale price sealed the deal! I know cake mixes generally don’t cost very much, but every few pennies help manage the budget.
If you use cake mixes frequently, then by all means, stock up when they’re on sale. Stretch those savings over a few months that way.
I normally don’t make cakes, but my husband’s favorite dessert of all time is Boston Cream Pie. I decided to make a Strawberry Boston Cream Cake. Add some pudding and fruit filling, we were all set.
Fresh strawberries are coming into season, also. I added some of them on the side of each serving and folks were loving this cake!
My neighbor recently had surgery and has been recovering, but struggling with an appetite. I took half of this cake over to see if that would tempt. We got a text message 10 minutes later about how great this cake was!
I’d say it worked. His appetite was stimulated enough to cut a slice of cake right away.
Look at those yummy red strawberries! My grandma’s favorite dessert was strawberry pie and she would look forward to strawberry season every year.
Make It a Meal:
Cake is dessert, there’s no way around that. Serve up a buffet of desserts: Lemon black raspberry cake, peppermint cheesecake, peach coffee cake, fresh fruit cheesecake, and chocolate mocha cake. Don’t forget to have the coffee made!

Strawberry Boston Cream Cake Recipe
Ingredients:
Strawberry cake mix, eggs, oil, water, vanilla pudding, milk, cherry pie filling, cream cheese icing, strawberries.
Recipe Directions:
Mix and bake the cake, prepare and chill the pudding. Slice and layer.
Strawberry Boston Cream Cake
Perfect for Easter or Mother's Day, this cake has all the flavors of springtime!
Ingredients
- 15 ounce Strawberry cake mix
- 1/3 cup Oil
- 3 Eggs
- 3.5 ounce Vanilla pudding package
- 2 cups Milk
- 1 cup Cherry pie filling
- 2/3 cup Cream cheese icing
Instructions

Preheat oven to 350 degrees Fahrenheit.

Prepare cake mix according to package directions. (I used 1/3 cup oil, 3 eggs and 2/3 cups water).

Pour cake batter into Bundt cake pan.

Bake 50 minutes at 350 degrees.

Allow cake to cool completely.

Prepare pudding with milk, allow to chill.

Slice cake in half horizontally.

Layer pudding and pie filling on bottom half of cake. Place top half of cake on filling.

Warm the icing in microwave for 15-20 seconds until melted. Drizzle over cake.
