Slow Cooker Coffee Rubbed Pork Roast
Slow cooker coffee rubbed pork roast is the way to win people’s hearts. I am not kidding. If you want to impress the in-laws, fix this meal and invite them over. The spicy coffee rub brings out the flavor of the pork. Slow cooking is not only easy, but ensures the roast is juicy and tender.
This recipe is simple enough for a beginner cook. Put it on a pretty plate and people will think you’re an expert.
Pork roasts go on sale at my grocery store on a regular basis. Maybe the local butcher gives them a good deal, I don’t know. I do know the meat cutter at my grocer’s meat counter is always happy to set me up with some great deals!
The coffee rub is something my sister introduced me to. Or I should say, she used it on a venison steak that she fed my dad. He was so impressed by it, he came back from upstate NY and told me about it.
The spices I use are ones I think work well together. You can mix it up a bit if you like.
But first, try this slow cooked coffee rubbed pork roast as the recipe is written. You may find you like it as much as my dad, and won’t want to make any changes!
This meal was super easy since I put the veggies in with the roast to cook. After I pulled the roast out to rest, I spooned the veggies into a large bowl and sprinkled them with parsley and topped with a pat of butter.
It’s a farm wife way of fixing potatoes and carrots. It’s delicious, even if we all might not need the extra pat of butter, it’s worth an extra lap around the block on my evening walk.

We’re not gravy people in my house. In fact, the only two dinners that see gravy on the table are Thanksgiving and Christmas. And even then, it’s from a jar. We’re a family of non gravy people, but don’t ask about the pies and salads we eat!
You could serve gravy with this meal if you like. If you’ve got a great recipe for gravy, I’d love if you would share it in the comments. I probably should have a “go to” gravy recipe.
Make It a Meal:
When the roast is cooked, remove from the slow cooker onto a cutting board and slice into 1/2 inch slices. Serve with a side salad and some warm bread for a winning dinner.
Variations:
Add sliced onion and celery or some broccoli and cauliflower if you prefer those vegetables instead of carrots and potatoes. Or use the really huge slow cooker and use all the veggies with your roast.
If the spice mixture didn’t cover your roast in the quantities described in the recipe above, simply make up a second or third batch and continue rolling the roast in the pan until it’s completely covered.

Wow. That pork looks so moist and delicious and goes so well with the veggies.
Thanks! It’s delicious and the slow cooker seals in all that wonderful moisture.
This is such a fantastic idea! We are huge fans of Pork Chops in our house but I never thought to rub ’em with coffee – I so cannot wait to try this-thanks so much to you, your dad and sis!
Shashi,
You have got to try this ASAP!
I’m sure your family will love it as much as mine!
I absolutely love incorporating coffee into savory meat recipes. Lovely!
Valentina, It’s fun trying an ingredient like coffee in different recipes … people are always so surprised to hear what my “secret ingredient” is.
My husband would love this! He loves pork in the slow cooker and the idea of adding coffee is so unique!
Dannii,
This works really well with a drier slow cooker recipe … not much broth in the bottom, if any. This recipe actually relies on the pork juices to create the steam for cooking.
Love a coffee rub! This looks great.
Thanks Abra!
My husband LOVEs pork roast. I bet the meat is so tender and delicious cooked in the slow cooker this way. I love all of the bold flavors you used.
Emily,
This is a wonderfully tender meat – I’m afraid that my slow cooker has almost spoiled me for any other cooking method LOL. Let me know how your husband likes the pork roast this way.
That looks like a great Saturday dish for a rainy day. Maybe one could add some sauerkraut to it too and bread dumplings? I think my friends in Europe need to check out your recipe, they will love it!
Helene, you are so correct, perfect damp and dreary day food!
Saurkraut would be a perfect side dish!!
Thanks for sharing.
I love pork roast but have never had coffee rub on them before. Very intrigued – Sounds delicious. Can’t wait to try.
Veena, I think you’d like it. You can always try it on pork chops or something smaller than a roast if you want to test it out first.
I have used coffee rub on beef, but I was just wondering the other day if it would work on pork. According to this delicious recipe it sure does. Perfect…thanks for answering my question!! Love how coffee brings out the flavour of the meat so well.
You’re welcome, Gloria! It does very well on the pork. If you want to sweeten the pot, add a spoon of brown sugar or molasses … give it a try and let me know what your family thinks!
Being a vegetarian I’m not familiar with pork taste but I love coffee flavour. Never thought of infusing coffee flavour for roasted vegetable.. I should try this for cauliflower
I’ve seen some amazing looking roast cauliflowers – I’ll bet this rub would work wonderfully!
I’ve never heard of a coffee rub but sounds interesting. I don’t eat pork but I bet it would be good with the veggies as well.
I’m sure it’d be great on the veggies! Roast a cauliflower like TraditionallyModern mentioned above.
Good stuff
It is amazing how a coffee rub gives such a rich flavor. This recipe would be a definite winner with my family.
You know, Amanda, coffee lovers everywhere should try this recipe. It’d justify their increased intake of caffeine!
This coffee rubbed pork roast is perfect and juicy. I like to have this kind of meal. I like your secret ingredient coffee
Thanks Swathi!
I think the combination of the coffee rub and the slow cooker is the trick to the pork roast success.
I am latina and pork is a favorite protein to cook with. Pork roast is so versatile. Love the pairing with the veggies and how this is a homey and easy recipe to make.
Pork does go with just about everything, doesn’t it?! Thanks for stopping by Adriana!
I have heard many a times about using coffee rub on meat. I wonder how that would tastes with something vegetarian. I need to give this a try with tofu or paneer and see what my family has to say.
Sandhya, let me know how it works on tofu. I’ve had tofu only a couple of times and frankly wasn’t impressed – I think largely due to the preparation method. I may have to experiment myself with this one.
This sounds so delicious and I love slow cooker recipes. I’ve never made homemade meat rub at home and totally loving your recipe. Have bookmarked to try later.
Thanks Molly! Let me know how it turns out!
The store bought rubs can be pretty pricey for my budget. This cost only a few pennies.
I know coffee enhances the flavor of chocolate but have never tried it in a roast. Seeing how totally delicious your roast looks, it’s high time I try using coffee for flavoring my roasts, too!
I’m thinking coffee can be used in nearly everything … well, that might be an exaggeration, but I’m open to trying it. lol
That’s a dish my father would love, he is a great meat eater, and pork is definitely his favourite. Using coffee must be unusually flavourful, I have never thought of using it with roast, but it sounds like a great idea. This roast has to be really delicious!
The coffee has acid in it, which helps tenderize the meat. The flavor blends with the other spices… it is a wonderful flavor. Treat your dad to a special dinner!
This is gorgeous! Pork or chicken are my go-to recipes for the crock pot because they hold up so well. I haven’t been brave enough to try coffee on any of my meats and use it only for my hubby’s wake up cup or some baking recipes. Looks amazing and I think I will give it a try tomorrow!
Jennifer, be brave! You can do it! I’m sure you’ll both love it…and your husband will never miss the grounds from the can!
There is nothing in the world that tastes as good as a slow roasted pork dish. A coffee rub is new to me, but I’m willing to try anything at least once!
Byron, you are adventurous enough…and I’ll bet you love this. Truly the coffee flvor is mild after roasting and the spice flavor prevails.
I LOVE coffee rubs. The flavor pairs so well with pork, and makes for a delicious dinner!
Thanks Kylee for the vote of confidence … it’s also nice to meet a fellow coffee rub fan!
Coffee with pork meat? I never tried this but it sounds fantastic. I can’t wait to give this recipe to my parents. I don’t eat pork for years now but they love slow roasted pork meat. This looks so good.. Meat is so tender. Yum!
Treat the parents and they’ll love this. Slow cooking and the acid in the coffee really do tenderize the meat.
Question: what type of coffee do you use? Instant, or what type of grind? And if you don’t have to use instant, could you use maple flavored coffee?
Thanks!
Elizabeth,
Use your favorite coffee! Maple flavored would be fabulous!
I have used both instant and grounds … dark roast and light roast … they all work well.
Thanks for checking,
Noel
