Slow Cooker Coffee Rubbed Pork Roast
Slow cooker coffee rubbed pork roast is the way to win people’s hearts. I am not kidding. If you want to impress the in-laws, fix this meal and invite them over. The spicy coffee rub brings out the flavor of the pork. Slow cooking is not only easy, but ensures the roast is juicy and tender.
This recipe is simple enough for a beginner cook. Put it on a pretty plate and people will think you’re an expert.
Pork roasts go on sale at my grocery store on a regular basis. Maybe the local butcher gives them a good deal, I don’t know. I do know the meat cutter at my grocer’s meat counter is always happy to set me up with some great deals!
The coffee rub is something my sister introduced me to. Or I should say, she used it on a venison steak that she fed my dad. He was so impressed by it, he came back from upstate NY and told me about it.
The spices I use are ones I think work well together. You can mix it up a bit if you like.
But first, try this slow cooked coffee rubbed pork roast as the recipe is written. You may find you like it as much as my dad, and won’t want to make any changes!
This meal was super easy since I put the veggies in with the roast to cook. After I pulled the roast out to rest, I spooned the veggies into a large bowl and sprinkled them with parsley and topped with a pat of butter.
It’s a farm wife way of fixing potatoes and carrots. It’s delicious, even if we all might not need the extra pat of butter, it’s worth an extra lap around the block on my evening walk.

We’re not gravy people in my house. In fact, the only two dinners that see gravy on the table are Thanksgiving and Christmas. And even then, it’s from a jar. We’re a family of non gravy people, but don’t ask about the pies and salads we eat!

Make It a Meal:
When the roast is cooked, remove from the slow cooker onto a cutting board and slice into 1/2 inch slices. Serve with a side salad and some warm bread for a winning dinner.
Variations:
Add sliced onion and celery or some broccoli and cauliflower if you prefer those vegetables instead of carrots and potatoes. Or use the really huge slow cooker and use all the veggies with your roast.
If the spice mixture didn’t cover your roast in the quantities described in the recipe above, simply make up a second or third batch and continue rolling the roast in the pan until it’s completely covered.

Slow Cooker Coffee Rubbed Pork Roast Recipe
Ingredients:
- 2 lb Pork Roast
- 2 TB Coffee
- 2 tsp Garlic Powder
- 2 tsp Black Pepper
- 2 tsp Salt
- 2 tsp Parsley
- 1 lb Carrots
- 1 lb Potatoes
Recipe Directions:
- Mix the spices together in a 9×13 pan.
- Roll the roast in the spice mixture until it’s coated.
- Cut carrots into 3 inch lengths.
- Cut potatoes into 1 inch pieces.
- Place the carrots, potatoes and roast in slow cooker.
- Heat on low 6-8 hours or 3-4 hours on high.
