Simple Spring Supper Alfredo with Ham and Peas
Spring is coming, the ground hog said it’d be early this year. I’m hearing talk about Easter already, and am just waiting for the day my crocuses pop out of the flower bed.
This supper is a simple meal, that gets a lot of folks going back for second servings. I like it for nights when I don’t have much time to prepare supper, but want a warm meal on the table. This recipe takes only about 20 minutes to prepare.
Alfredo with Ham & Peas
12 oz Bowtie Pasta
15 oz Alfredo sauce
4 oz Mushroom slices
8 oz Diced Ham
8 oz Frozen Peas
1 med Onion sliced
4 TB Butter
Prepare pasta according to package directions. While the pasta is cooking, slice the onion and place in large pan with butter. Saute the onion until soft. Add the remaining ingredients and heat over low setting until pasta is cooked. Strain pasta and add to sauce. Toss and serve.
Make it a Meal: serve with a salad and bread.

Granted, that’s a high sodium count, but the majority of that comes from the prepared Alfredo sauce. If you purchase a low sodium variety, you’ll have a better number. Also, if you have the time, you can make an Alfredo sauce from scratch using cream cheese, milk and Parmesan cheese.
