Sausage Breakfast Casserole
Serve this sausage breakfast casserole for any meal and your family will devour it! Made with sausage, hash browns, eggs and some special flavor ingredients, this is easy to prepare ahead of meal time.
Sometimes you just want to have breakfast for supper. There is a special feeling about eating eggs, bacon, pancakes, etc in the evening. It is like you are getting away with breaking a rule of some kind. Do not tell mom, but we are eating breakfast after a day at the office!
I have always been a supporter of eating. That sounds silly when you think about it, but stay with me and let me explain. I told my kids, “I do not really care what you eat for breakfast as long as you eat.” The same holds true for supper. It is not as important to me that we follow the traditional menus, as much as we get some nutrition in our bellies.
I have used this breakfast casserole recipe for many different meals. It works wonderfully for a holiday breakfast, like Christmas or Easter, when you have morning activities and need a dish you can prep the night before. It also transports easily, so I have taken it to work potluck lunches.

Variations:
Add some diced green peppers, bacon bits or if you like it hot, toss in some jalapeno peppers. If your family is a fan, you could replace the sausage with venison. If you want something more vegetarian, leave out the meat entirely.
This casserole is nice, since most breakfast ingredients are fairly inexpensive, you can afford to feed a crowd for a reasonable price. In fact, you might consider this dish if you have to feed your child’s sports team after a game.
Make It A Meal:
Serve with a fruit cup and biscuits. Top it with your favorite condiments: ketchup, salsa, hot sauce, Ranch dressing.

Sausage Breakfast Casserole Recipe
Ingredients:
- 1 lb Ground Sausage
- 1 sm Onion, chopped
- 2 c shredded Cheddar Cheese
- 1 pkg (12 oz) frozen Hash Browns
- 1 can (5 oz) sliced Mushrooms
- 8 eggs
- ½ c Milk
Recipe Directions:
- Preheat oven to 350 degrees Fahrenheit.
- Brown sausage and onions in skillet.
- Layer half the frozen hash browns in 9 x 13 baking dish.
- Top with sausage, onions, mushrooms and 1 cup shredded cheese.
- Add remaining hash browns and 1 cup cheese.
- Beat eggs with milk and pour over entire dish.
- Bake for 30 minutes at 350 degrees. Casserole is done when toothpick comes out clean.
