Roasted Carrots for Easter Dinner Side Dish
Carrots are a perfect Easter Dinner side dish. Oven Roasted Carrots are easy to make, don’t take long to prepare and bake in the oven alongside your ham.
Add a few onions for a bit of flavor and this three ingredient side will be a star on the menu!
Simply spiced with salt and pepper, this dish will appeal to even the pickiest eaters. Kids like foods they can identify, these carrots are unmistakable!

Of course, you can substitute your favorite spice for the salt and pepper. I’ve had good luck with parsley, rosemary and even dill.
Using whole carrots to start this dish seems like an obvious beginning. However, some people are leery of large carrots, preferring the mini carrots sold at the grocery. You can use those, and they roast just fine.
I’ve found the larger carrots have a more satisfying flavor. It’s just more “carroty”. I think I made that word up … carroty?
When using the large, whole carrots, you’ll want to cut them into more manageable bite sizes. I cut on the diagonal, about an inch to an inch and half long.
I give my carrots a good scrubbing in the sink with a scratchy pad to clean them, but don’t peel the carrots. You may peel yours, if you like. I’m a bit lazy when it comes to prepping my vegetables and I don’t want to lose any bits of carrot.
I’ve seen some people peel a carrot so completely, it’s pencil sized when they’ve finished. That seems like a waste of carrot to me.
Oven Roasted Carrot Recipe
Ingredients:
- 1 lb Carrots
- 1 lg Onion
- 1/2 c water
- Salt &Pepper
Recipe Directions:
- Preheat oven to 350 degrees Fahrenheit.
- Wash carrots and cut into 1 – 1.5 inch pieces.
- Peel and slice onion.
- Place carrots and onion in 2 quart baking dish.
- Salt and pepper to taste. Place water in bottom of pan.
- Cover and bake at 350 degrees for 1 hour.
