Red Pepper Shrimp Dip
Red pepper shrimp dip is what you need at your next tail gate party. Cool and creamy with just a bit of zip, this dip will disappear in an instant. You can make it with just four ingredients, so grab your grocery list, let’s go!
The easiest dip since Hidden Valley introduced us to dried ranch dressing in an envelope, this seafood treat comes together in less than five minutes.
My husband is the shrimp eater in my house. There’s one in every house, isn’t there? Maybe you don’t have one in your house, because my sister has a houseful.
I’m pretty sure there’s some sort of statistical rule that says the average household has one shrimp eater. At any rate, when I fixed this red pepper shrimp dip last week, my husband sat down and ate the whole thing.
He took his time and lingered over the dip, but he ate it all. His commentary: “This is good. I mean, it’s really good.” He said that several times in between scooping the dip onto crackers and lifting them towards his mouth.
I don’t think I heard him smack his lips, but if we were in a sitcom, that’s for sure what would have happened.
He added some other comments about how the red pepper flavor was so different from the usual shrimp sauce. The bottom line, he prefers this style of shrimp dip. (Good Thing!)
The secret: Roasted Red Peppers in Oil.
Yup, you read that right. A classic pasta toss in becomes a tail gate must have. I buy bottled roasted red peppers for lots of reasons. They’re delicious. They’re healthy, kinda. They taste yummy. They dress up pasta and Italian dishes. But, mostly because I love how they look. They’re so pretty!
The other trick to this red pepper shrimp dip is the shrimp. Since you’ll be serving this dip on crackers or celery sticks, you want tiny salad shrimp. That’s good news!
Sure it is, because they’re usually quite affordable. Everybody’s out there looking for jumbo shrimp for all the fancy shrimp dishes. Here, we want the tiny, tasty, shrimpy shrimp.
That’s the tricks, folks. From here on out, it’s as easy as can be.
Make It a Meal:
Serve as an appetizer, this will serve eight. But if you’re eating alone, you could finish the whole thing and call it lunch. Who’s going to tell?
Serve with crackers, toast crisps or veggies for dipping. Â Drop a dollop on your side salad for a great dressing replacement.
No matter what you serve alongside for dipping, make sure you put this on the snack table during the football game. I’ll bet the dish is empty before halftime!

Red Pepper Shrimp Dip Recipe
Ingredients:
- 1/2 c Roasted Red Peppers in oil
- 1 c Sour Cream
- 1/2 c Mayonnaise
- 4 oz Salad Shrimp
Recipe Directions:
- Puree roasted red peppers in food processor or blender.
- Mix sour cream and mayonnaise.
- Layer the sour cream mixture in bottom of bowl.
- Cover with red pepper puree.
- Top with shrimp.
**Note: If you buy frozen shrimp, you need to thaw it before using in this recipe. Place the shrimp in a colander or strainer. Set that in the sink and run cold water over the shrimp for 2-3 minutes. Then allow to drain for 5 minutes.
Toss and allow to drain for an additional 5 minutes. You want the excess water on your shrimp to be minimal. In fact, I placed my shrimp on several folded paper towels for a few minutes as well as draining.
This is probably the most time consuming part of the recipe – but since it can be done up to a day in advance of preparing the recipe, I don’t count it in the recipe prep time!
