Rainbow Garden Salad
When the garden gives you a rainbow’s bounty of produce, make a salad worth its weight in gold! This salad is easy to prepare: chop, toss, dress, enjoy.
I used a wide variety of vegetables and colors, for two reasons: 1. My mom always said a good meal should contain different colors. 2. I like a colorful dish.
Both are pretty good reasons, I think!
Depending on what produce your garden gives you or you are able to find at the grocer or farmer’s market, you can make this salad a rainbow, or mono-chromatic. What pleases you best?
I’ll admit, I have a problem buying just a few vegetables. I start looking at the display, piled high, and next thing I know, I’ve got two, three, four of each type of veggie in my possession.
This might be a problem if we didn’t like salads and veggies so much. I hate when I forget about a veggie that’s been shoved to the back of the fridge and it wilts, withers and dies.
Rainbow Salad Recipe
Ingredients:
1 Red Pepper
1 Green Pepper
1 Yellow Pepper
½ Red Onion
1 small Zucchini
1 small Yellow Squash
1 cup Corn
1 cup Black Beans
1 cup Grape Tomatoes
Salad Dressing
(doesn’t this pile of peppers look wonderful? We tried planting some like this, but didn’t have much success. I think the green beans overran the peppers. <sigh> maybe next year. )
Recipe Directions:
- Dice all the vegetables except the black beans, corn and tomatoes.
- Slice the tomatoes in half.
- Toss in a large bowl.
- Chill one hour.
- Serve with salad dressing of your choice.

Make it a Meal:
Serve with grilled meat, sandwiches or soup.
Usually, I’ll just make a double batch of this salad and that’s what we’ll have for supper. If I’m looking to round out the meal a bit, I add some rolls. But honestly, with this much fresh, crunchy goodness, who needs much else?
Variations:
I like Balsamic Vinaigrette dressing on my Rainbow Salad. However, a honey lime dressing would be wonderful. And you know, you can’t go wrong with Ranch, right?!
