Rachel’s Creamy White Chicken Chili ~ Recipe

Ingredients
- 1 pound Boneless Chicken Breasts cut into small chunks
- 1 medium Onion chopped
- 1 1/2 teaspoons Garlic Powder
- 1 tablespoon Vegetable Oil
- 2 cans Great Northern Beans 15.5 oz size
- 1 can Chicken Broth 14.5 oz size
- 2 cans Chopped Green Chiles 4 oz size
- 1 teaspoon Salt
- 1 teaspoon Cumin ground
- 1 teaspoon Oregano dried
- 1/2 teaspoon Pepper
- 1/4 teaspoon Cayenne Pepper
- 1 cup Sour Cream
- 1/2 cup Whipping Cream or half and half
Topping
- Monterey Jack Cheese shredded
- Cheddar Cheese shredded
Directions
In a large saucepan, saute the chicken, onion and garlic in the oil until the chicken is no longer pink.
Add beans, broth, chilies and seasonings, bring to a boil.
Reduce heat, simmer uncovered for 30 minutes.
Remove from heat, stir in sour cream and cream, serve immediately with shredded cheese on the side for optional topping.
