Quick Meatball Pasta
Tonight’s supper is going to be a quick and easy meal. I’ve had a bit of a hectic day and don’t really feel like spending much time planning a meal. Have you had those days? I’ll bet you have!
Anyway, it seemed like things started out great, then I had paper jam in the printer repeatedly, then I realized I was hours from missing a deadline … so my frustration level was working it’s way up. I tackled each item as best I could, and finally got the printer to work and the deadline met. My mood has improved, but I’m still a bit drained.
Quick Meatball Pasta
1/2 box (4 oz) Â Rotini pasta, cooked
1 lb frozen Meatballs
2 cups Chicken Broth
1 large Onion, chopped and sauteed
Place the meatballs and chicken broth in a saucepan on top the stove over medium heat. Simmer until meatballs are thawed. Saute the onions while the broth simmers. Add the onion and pasta to the meatballs and broth. Heat through.
Make it a Meal: Serve with garlic bread and a side salad.
Variation: replace the meatballs with diced chicken or ham. Add some broccoli and cauliflower with the onions for more veggies.
