Quick Cherry Cobbler
A quick cherry cobbler is the best way to end a summer picnic. This recipe is full of the sweet – tart flavor we expect from cherries topped with a slightly chewy – crunchy crust. That’s what cobbler is all about.
This quick and tasty recipe uses some pantry ingredients and canned pie filling to save you a lot of time and effort. You’ll love how easy the recipe is. Your family will love how it tastes!
When I was a girl, my parents had three tart cherry trees in the corner of the front yard. We looked forward to the summer day when those cherries were red and ripe!
We’d drag ladders from the garage and spend several days picking cherries, filling our bowls and paper grocery bags with the tart fruit.
It was a race to collect more cherries than the birds ate! We used old aluminum pie pans tied to a piece of string and hung in the tree branches to scare off the birds.
That worked fairly well, but the years we had the best harvest were the years when a robin made her nest in the cherry trees. She kept all the other birds away!

After we’d harvested as many cherries as we could manage, we spent hours sitting on the patio pitting those tiny red fruit. Mom bagged up the pitted cherries for the freezer. We sure enjoyed the “fruits of our labor” come winter and mom baked a cobbler or pie!
The cherry cobbler recipe that mom used involved a more traditional pie crust type topping and was made in a 9×13 pan. I’m sure that was because mom was trying to feed five children and a husband … all of whom had bottomless pit type appetites!
This quick cherry cobbler recipe comes together in just a few minutes. I like that it uses just the basic baking ingredients that most kitchens have on hand.
In fact, the only item you may need to purchase might be the pie filling. I keep a can on hand, because I tend to use it to top cheesecakes and pancakes. You never know when pie filling will be needed!
Make It a Meal:
This is dessert, so treat it as such! Top with ice cream, whipped cream or a dollop of heavy cream and dive in. If you’re on a diet, skip supper and just go straight to dessert.
Variations:
Use any canned, prepared fruit pie filling. If you have fresh or frozen fruit, toss in 1/2 cup flour and 1/c sugar and spread on bottom of the pan in place of the canned fruit filling.
My grandma had a clipping in her recipe box for an even faster shortcut cherry cobbler. This recipe totally relies on #ConvenienceCooking packaged ingredients: canned pie filling and cake mix.

Cherries are my all time favorite fruit. I didn’t try them until college when I moved from the Midwest to the Pacific Northwest (they were too expensive growing up), and I would go to the u-pick farms every summer to bring home gallons of them. We’ve recently moved back to the PNW and I’m excited to start making delicious cherry recipes like this one again!
