Potato Soup
Fall has begun. I have seen some leaves falling and the cool nights have caused me to add some blankets to the bed. Potato soup is the perfect dish for this time of year.
I love this time of year for the warm days and cool evenings, but especially because I can start making soups and stews in my crock pot. Many of the recipes are too heavy for hot summer days, but really hit the spot after a day of cutting wood or working in the yard.
The other morning was a drizzling rain, cloudy sort of day and as I ran errands all I could think about was a bowl of thick warm soup. So the minute I got home, I pulled out the slow cooker, some vegetables and the cutting board. Dinner was a ways off, but I had something to look forward to!
You could prepare this soup on the stove top, just us a large stock pot and keep the burner on low all day. This method is best if you are going to be passing through the kitchen at various points in the day and can keep an eye on the stove.
There is nothing much worse than cleaning up a boiled over and burnt onto the stovetop.
With cooler weather approaching, crock pot cooking is a great way to feed your family a hot meal without spending a lot of time in the kitchen.
Soups such as this only require a little bit of prep work first thing in the morning, then simmer away all day while you complete yard work or take in a football game.
Make it a Meal:
Add some warm biscuits for a light lunch. Serve with a salad and sandwich for a hearty supper.
Variations:
Add chopped ham or diced chicken for more protein. Add diced carrots, parsnips or sweet potato for more vegetables and color. Toss in some hot peppers if you would like some heat in the soup.
When serving, a great way to allow folks to personalize their serving is to arrange a selection to toppings: diced green onion, sour cream, shredded cheese, oyster crackers, bacon bits.

Potato Soup Recipe
Ingredients:
Potatoes, Onion, Bacon, Celery stalk, Milk, Butter, Salt & Pepper
Directions:
Dice the potatoes and onions. Chop the celery stalk. Crumble the cooked bacon into bits. Place all ingredients in a medium size slow cooker and add seasoning to taste. Cook on low for 6 to 8 hours.

- 4 medium to large Potatoes
- 1 large Onion
- 5 oz Bacon
- 1 Celery stalk
- ½ gallon Milk
- 2 TB Butter
- Salt & Pepper
Instructions

Dice the potatoes and onions.

Cook on low for 6 – 8 hours.
