Pimiento Cheese Dip

There’s a bit of a debate in foodie circles on the correct spelling of this classic dip. Pimiento or pimento. The debate rages on and on, discussing the origins of the word (Spanish), definition (a type of pepper) and appropriate pronunciation.
I’m not taking sides in the debate. I’m using the spelling that my family always used. You could say that I’m standing on the grounds that “If it was good enough for my grandparents, it’s good enough for me.”
If you want to spell this recipe as pimento cheese dip, then I’m fine with that. Frankly, once you take a bite, you’ll be more concerned with getting your share of the cheesy goodness and not so worried about the finer points of language.

I’m also not taking sides on whether or not you should shred your own cheese. I’m a cheese lover, so anyway you serve it makes me happy. I love the #ConvenienceCooking aspect of purchasing cheese already shredded and packaged up. Open, measure, use.
How can that be wrong? I also love the idea of knowing exactly where my cheese is from and how it was processed. It really depends on the kind of day I’m having which side of that fence I’m voting. What’s important for this recipe, is that you have cheese which is shredded.
Make It a Meal:
Let’s face it, this pimiento cheese dip is prime snacking food. I mean you could make a sandwich out of it, but why not just add it to a smorgasbord of appetizers and nosh your heart out?
Find a bowl of crackers or veggies and dip into Red Pepper Shrimp, Creamy Cilantro, Hot Spinach and Artichoke or Ricottta Basil.
Have you done that lately? It’s been awhile since we’ve had an appetizer buffet for a meal. It seems so decadent and revolutionary. You know, it’s the sort of thing your mother probably won’t approve of since appetizers don’t generally appear to be #SquareMeal status.
However, if you plan out your appetizers, you can include all four food groups which will help make mom happy.

Pimiento Cheese Dip Recipe
Ingredients:
- 2 cups Cheddar Cheese, shredded
- 5 ounces Pimiento bits
- 1/2 cup Mayonnaise
- 1 tablespoon Mustard
Recipe Directions:
- Mix all ingredients in a small bowl.
- Chill for at least one hour to allow flavors to blend.
