Philly Style Cheese Steak Sandwich

Food from a roadside cart can be tasty and filling. Usually it is quite delicious and is a big hit for supper!
Other than hot dogs, fixing food cart menu items at home can be difficult. However, I have been successful at making Philly style cheese steak sandwiches at home that come close to the ones we ate in Philadelphia.
Mind you, the food tastes good, but there is no way to capture the atmosphere of eating from a food wagon on the sidewalk of a busy city. That experience must be lived to appreciate.
There is just something about a juicy, savory sandwich eaten in fresh air that increases the enjoyment!
Philly Style Cheese Steak Sandwich
12 oz. thinly sliced beef
1 lg. onion, sliced
4 slices cheese
4 hamburger buns
Cook the sliced onions in a skillet until transparent. Cut the beef slices into strips. Cook the beef in the pan with the onions until browned. Divide the beef and onions evenly on the hamburger buns. Top with a slice of cheese.
Make it a meal: Serve with French fries or potato chips and a salad for a full supper. A roll of paper towels or supply of napkins is recommended.

Variations: Mix in sliced mushrooms with the onions. Top with Swiss, American or Mozzarella cheese. Drizzle some catsup or barbeque sauce on top the meat. For some real zing, spread a bit of horseradish on the bun.
If you want to make bigger sandwiches, more reminiscent of the food cart ones, you will need to serve the meat and onions on a Hoagie style bun instead of hamburger buns. I like the hamburger buns simply because they are a manageable sized sandwich to hold and filling enough to be a meal. If I’m using Hoagie style buns, I cut the sandwiches in half for serving.
If you want smaller sandwiches, use dinner rolls and slice them in half to form the top and bottom of a bun. This is a good trick to use when you are serving the sandwiches as part of a buffet and you want people to be able to fill their plates with a variety of side dishes in addition to the sandwich. It is also a good way to make a sandwich that isn’t overwhelming for young children.
Left over sandwich filling will keep in the refrigerator up to one week. Unless a midnight snacker gets a hold of the container. Â If you want to freeze the filling, allow it to cool completely and store in a zip top bag. Frozen filling will keep for a month.
