Nacho Grande Boat with Sweet Pepper Salsa
Homemade sweet pepper salsa made with tomatillos is the perfect topper for a Nacho Grande Boat.
The salsa takes a few steps to make, but is totally worth the effort for the freshness, full flavor and knowing exactly what ingredients it contains.
Blackened sweet peppers, tomatillos and tomatoes give the salsa a depth of flavor that you just don’t get from a jar. You’ll love this so much, you may not wait to put it on the Nacho Grande Boat.
The cookbook Salsas and Moles is full of recipes that bring the flavors of Tex-Mex and Mexican cuisine into your home. I modified the first recipe in the book just slightly, as I wasn’t able to purchase the exact ingredients the author recommended.
Hey, I live in North Central Ohio, give me a break.

I considered myself lucky to be able to purchase tomatillos at my local grocer. If you’ve never seen a tomatillo, it’s like a small green tomato in a papery husk. I found them in the fresh produce section.
I’ve seen the tomatillos before and been tempted to bring some home, but I didn’t know how I was going to use them, so waited until I found this recipe.
Sweet Pepper Salsa with Tomatillos Recipe
Ingredients:
- 8 sm Sweet Peppers
- 6 Tomatillos
- 8 Cherry Tomatoes
- 4 cloves Garlic
- Salt
Recipe Directions:
- Roast the vegetables in cast iron skillet on medium high heat until they start to blacken.
- Remove the vegetables as they blacken and place on a plate to cool.
- Slice the stems from the peppers and remove the seeds.
- Place all vegetables in blender and pulse until finely chopped.
- Add salt to taste.
Tip:
In the Salsas and Moles cookbook, the author repeatedly recommended covering the cast iron skillet with layered aluminum foil. She also repeated the instruction to turn on the exhaust fan. I couldn’t figure out why she was so insistent.
I can tell you now – the roasting of the vegetables creates a ton of smoke! and leaves charred bits all over the skillet! I had to open the windows o let the smoke out and fresh air in! Not fun at 40 degrees!
I suggest using the grill outside to complete the blackening process.

Truly, you can make a meal out of the nacho bowls. We did! If you want to use them as a side dish, simply add your favorite Mexican or Tex-Mex dishes. This is a good dish to serve on #TacoTuesday or for Cinco de Mayo.
If you don’t feel like make the loaded Nacho Grande Boats, you can just serve the salsa with your chips and call it a good thing!

Looks yummy
Thanks Stacy!
That sweet pepper salsa sounds to die for! Love the photos, and the recipe sounds amazing! Must try!
Levan,
Thanks for coming over, you really need to try this recipe and do let me know how it turns out for you! But – make sure you’re ready for the smoking peppers as they char! I highly recommend the outdoor grill for that step!
I really love this salsa. Awesome. I love peppers and it is perfect that you started by roasting them.
Ah Peter, that roasting definitely made this salsa over the top flavor-full! I’ll do it again this way in a heartbeat! (outdoor grill tho)
Your post hits close to home. I’ve had to freeze my butt off more than once airing the house out after a cooking misadventure!
This salsa looks fantastic. I’ve made homemade salsa a couple times and have been dissapointed with the results, but I’ve never tried roasting veggies first. Maybe that’s what I’ve been missing. And I would totally love to be eating that nacho boat right now. It looks so good!
Tracy, I’m pretty sure most of us have smoked out the kitchen and then opened windows with complete disregard to outside temps! It’s all part of the process – trying new recipes, new techniques and learning when to step back from the stove!
Try roasting your veggies, I’m sure you’ll notice a difference, no matter which recipe you use for your salsa.
This looks and sounds right up my alley — I adore colorful peppers, and I think I’d be happy with a bowl of that salsa and a BIG spoon
Sue,
Seriously, you know how hard it was to not eat that bowl of roasted veggies?! My husband was drooling over that and asking if he could have ‘just one?’ Thankfully, I was ready to move into the blender phase of the recipe quickly, or there would have been nothing to make salsa with!
And yeah, it’s good just eaten from the bowl with a spoon. Who needs chips!
I smoke myself out of my kitchen at least once every two weeks – always so fun
I love tomatillos and always looking for new ways to use them – your salsa looks delicious!
April,
It was all “fun and games” til my husband came in and thought I was killing the birds (parrots and finches) lol I’d already opened the kitchen window and he ran around looking for the proper one to open that would create enough draught to pull the smoke out without freezing the birds. Meanwhile, Baby was in the other room asking “What’s going on?”
I love Blackened Peppers! It’s my favourite way to prepare peppers
That salsa looks absolutely delicious! Pinned. Thank you for sharing this with us at #SaucySaturdays
Dini,
Thanks for hosting and popping over!
