Nacho Grande Boat with Sweet Pepper Salsa
Homemade sweet pepper salsa made with tomatillos is the perfect topper for a Nacho Grande Boat.
The salsa takes a few steps to make, but is totally worth the effort for the freshness, full flavor and knowing exactly what ingredients it contains.
Blackened sweet peppers, tomatillos and tomatoes give the salsa a depth of flavor that you just don’t get from a jar. You’ll love this so much, you may not wait to put it on the Nacho Grande Boat.
The cookbook Salsas and Moles is full of recipes that bring the flavors of Tex-Mex and Mexican cuisine into your home. I modified the first recipe in the book just slightly, as I wasn’t able to purchase the exact ingredients the author recommended.

I considered myself lucky to be able to purchase tomatillos at my local grocer. If you’ve never seen a tomatillo, it’s like a small green tomato in a papery husk. I found them in the fresh produce section.
I’ve seen the tomatillos before and been tempted to bring some home, but I didn’t know how I was going to use them, so waited until I found this recipe.
Sweet Pepper Salsa with Tomatillos Recipe
Ingredients:
- 8 sm Sweet Peppers
- 6 Tomatillos
- 8 Cherry Tomatoes
- 4 cloves Garlic
- Salt
Recipe Directions:
- Roast the vegetables in cast iron skillet on medium high heat until they start to blacken.
- Remove the vegetables as they blacken and place on a plate to cool.
- Slice the stems from the peppers and remove the seeds.
- Place all vegetables in blender and pulse until finely chopped.
- Add salt to taste.
Tip:
In the Salsas and Moles cookbook, the author repeatedly recommended covering the cast iron skillet with layered aluminum foil. She also repeated the instruction to turn on the exhaust fan. I couldn’t figure out why she was so insistent.
I can tell you now – the roasting of the vegetables creates a ton of smoke! and leaves charred bits all over the skillet! I had to open the windows o let the smoke out and fresh air in! Not fun at 40 degrees!
I suggest using the grill outside to complete the blackening process.
Nacho Grande Boat Recipe
Ingredients:
- Nacho Chips
- Ground Beef, browned
- Onion, diced
- Shredded Cheddar Cheese
- Black Olives, sliced
- Tomatoes, sliced or chopped
- Jalapeno, sliced
- Sweet Pepper and Tomatillo Salsa
- Sour Cream
Recipe Directions:
- Layer nacho chips in bottom of your bowl.
- Add remaining ingredients: browned ground beef, diced onion, cheddar cheese, olives, tomatoes, jalapenos.
- Top with Sweet Pepper and Tomatillo Salsa and sour cream.

Make It a Meal:
Truly, you can make a meal out of the nacho bowls. We did! If you want to use them as a side dish, simply add your favorite Mexican or Tex-Mex dishes. This is a good dish to serve on #TacoTuesday or for Cinco de Mayo.
If you don’t feel like make the loaded Nacho Grande Boats, you can just serve the salsa with your chips and call it a good thing!
