Marinated mushrooms are available in the aisle with the pickles and olives. You may be able to find some on the deli counter. I know one of the grocery stores in my area has an entire cold bar in the deli section dedicated to marinated olives and mushrooms. It’s a gold mine when I’m planning appetizers!
We love snacking on all sorts of goodies from this section of the grocery. However, the last jar of marinated mushrooms must have been overlooked on snack day, because it sat on my pantry shelf for awhile. I kept seeing it there and thought about when I was going to use it.
The other night, I was looking for something to make for supper. I was in a hurry and hadn’t really planned out my menu. When I opened the cupboard door and saw those mushrooms sitting beside the spaghetti noodles, I had a brainstorm! Mushroom Tomato Pasta was born!

The rest of the flavors in this dish are always a hit with my family – carmelized onions, bacon and tomatoes. Truly this dish was going to be a winner. We eat a lot of onions, so there is always a bag of them in the pantry. If you aren’t using onions, you’re missing out!

I kept it simple since I was making this mushroom tomato pasta on a weeknight, but you could pull out all the stops for date night. Make up some Olive Cheese Bread, a Garden Salad and Chocolate Mocha Cake.

Since there’s only two of us at home these days, this recipe made enough for dinner and then leftovers for two lunches. I find it interesting that no matter how much garlic bread I make, we rarely have any of that leftover. Pasta however is a different story.
We love it as a leftover! This pasta will keep in the refrigerator up to ten days. I store it in an airtight container and reheat by the serving in the microwave.
Mushroom Tomato Pasta Recipe
Ingredients:
- 1/2 lb Spaghetti
- 16 oz Marinated Mushrooms
- 8-10 oz Cherry Tomatoes
- 4 oz Bacon (3-4 slices)
- 1 lg Onion
Recipe Directions:
- Prepare pasta according to package directions.
- Slice onions into small pieces and cut bacon into small bits.
- In a large skillet, cook onion and bacon until onion is translucent.
- Add tomatoes and mushrooms and cook until the tomatoes are soft.
- Toss with pasta and let rest a few minutes so marinade can be absorbed by pasta.
