Maple Walnut Granola Recipe
For Christmas I was given a gift of homemade granola. I ate and ate it til it was all gone! Very good stuff. Great on ice cream, over top yogurt, under milk… no matter how I ate it, it was yummy.
So I decided I needed to make some of my own. I went searching on Pinterest for granola recipes added a couple to my Recipes To Try board. Found one that I wanted to make at this site. However, I didn’t have exactly all the ingredients she used, so I improvised.
My Granola
3 1/2 cups rolled oats
1 1/2 cups chopped walnuts
1/2 cup chopped peanuts
1 1/2 cup dried cranberries, blueberries and raisins
1 teaspoon salt
1 teaspoon cinnamon
1/4 cup brown sugar
1/4 cup vegetable oil
1/2 cup maple syrup
Mix all dry ingredients in large bowl. Mix wet ingredients in small bowl. I was a bit short on the maple syrup, so I topped off my measuring cup with some honey. (it’s a liquid sweet!) Pour wet ingredients over dry and stir until all mixed in. Spread on large baking sheet sprayed with cooking spray. Bake at 250 for 40 minutes. Stirring half way through baking time to break up chunks. Cool. Store in airtight container.
