Loaded Potato Soup
Loaded potato soup is the perfect dish to make you feel all warm and cozy during winter’s cold days.
This recipe is simple, using basic ingredients and time honored steps.
January is a month made for soups. I am not sure if it is the weather or my hibernating instinct that makes me want to make so much soup. This week I keep thinking about potato soup.
I have asked all my friends how they make potato soup. I have looked at potato soup recipes online and in cook books. I can not get enough information about potato soup.
The solution to that is to pull out the potatoes, onions and start a simmering pot of soup. I guess there are as many ways to make potato soup as there are cooks.
I decided to stay with my usual recipe, since I know it works well for my family. Sometimes experiments should wait for another day and this week was not the time for experiments.
From all the reading I did, there are creamy potato soups, vegetable full soups, soups with no meat, and soups with lots of meat. There are soups that are very thick and others that have more broth.
I think potato soup should be fairly thick and pretty creamy. My usual recipe definitely meets those criteria. That is probably why it is my favorite potato soup recipe!
Make it a Meal:
Serve with a sprinkle of cheese on top the bowl and crackers alongside. Add a salad or sandwich for a hearty meal. For a lighter meal, pour loaded potato soup into coffee cups instead of soup bowl. The smaller portion with a small salad makes a perfect lunch.
Variations:
If you would like to modify this loaded potato soup recipe slightly, exchange the sausage and bacon for diced ham. You might also replace the sour cream with milk if you are watching fat grams.
The nice thing about a pot of potato soup besides the warm meal is the low cost to the pocket book. Potatoes are often on sale during the winter months. I think this is planned by grocers to encourage my penchant for soup! It is probably not all about me and there is a better reason. But I do like being able to take advantage of these sales to stock up on potatoes.
One good part to the stocking up, if I double or triple this recipe, I have plenty of soup to portion into freezer containers and save for later in the winter.
I have discovered that it does not take a whole lot longer to cook the larger portion. This helps me keep my electric budget in control a bit since I am cooking once and eating the soup over several meals.
Storage:
The smaller plastic bags with the zip tops work great for individual portions. This makes a good quick lunch, either in the lunch bag or at home.
As you know, keeping the budget in line is almost as important this month as keeping warm and eating good food! This recipe takes care of all those goals. And it keeps me from dreaming about potato soup at night.

Loaded Potato Soup Recipe
Ingredients:
Potatoes, onion, sausage, bacon bits, sour cream, butter, shredded cheddar cheese, liquid smoke
Directions:
Dice potatoes into half inch cubes. Place potato cubes in large pan and add enough water to just cover the potatoes. Bring to a boil and simmer until potatoes are fork tender.
Meanwhile, in a skillet, brown the sausage and onions together. When the potatoes are fork tender, add the remaining ingredients and simmer for 15 minutes to heat through.
The cheese should be melted. Stir frequently to prevent cream and cheese from scorching to the bottom of the pan.
Loaded Potato Soup
Old fashioned goodness, thick and creamy potato soup will warm you up and fill your belly.
Ingredients
- 6 medium or large potatoes
- 1 large onion
- ½ pound sausage
- 6 ounce bacon bits
- 1 cup sour cream
- 8 tablespoon butter
- 1 cup shredded cheddar cheese
- 1 tablespoon liquid smoke
Instructions
