Lemony White Chocolate Chip Cookies
Everybody loves cookies! These lemony white chocolate chip cookies are easy to make and taste delicious.
Panera bread has wonderful soups and sandwiches, breads and bagels, but they also have some pretty fabulous cookies, too. Recently I had a cookie from Panera that contained white chocolate chips and macadamia nuts baked into a lemony sweet sugar cookie dough. I was hooked! You can make this great cookie at home.
My sister has a really super cookie dough recipe that she uses with her “world famous chocolate chip cookie”. That’s what I used for the basis of this recipe. I did play around with it a bit, since I wanted to add that lemony flavor and wanted it to shine. That meant playing down the brown sugar and certainly leaving out the chocolate!
My sister’s cookies are always perfect. I’m not kidding when I tell she’s known in the family as “The Cookie Goddess”. She’s truly perfected her recipe and no mater how often I try it, I can’t duplicate her success.
This lemon white chocolate chip cookie is pretty darn good, however.
I really wanted a chewy cookie with some texture that you can sink your teeth into. My goal was a light lemon flavor that didn’t overwhelm the taste buds. Chips fit into that cookie idea, but I didn’t want the crunch that macadamia nuts bring to the table.
If you want to jazz this cookie up, add some crushed lemon head candies or chopped macadamia nuts. I’m pretty sure the result will be a winner.

My grandma always had cookies in the drawer. However, she was not a cookie baking type grandma. The cookies she kept on hand were store bought. She was a fan of easy to serve foods and packaged cookies made by elves were generally available for snacks.
These cookies are quite different from the ones my grandma served. As a child, I was always happy to get a cookie. As an adult, my tastes have progressed.
Lemony White Chocolate Chip Cookie Recipe
Ingredients:
- 2 1/2 c All Purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 c Butter
- 1 1/2 c Sugar
- 1 Egg
- 2 TB Lemon Juice
- 1/2 tsp Vanilla
- 1 c White Chocolate Chips
Recipe Directions:
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl mix the flour, baking soda, baking powder and salt.
- In a large bowl, beat the butter and sugar, then add the egg, lemon juice and vanilla.
- Add the dry ingredients to the wet, a small bit at a time, mixing fully before adding more.
- When all mixed, add chips and stir with a spoon to incorporate.
- Scoop by spoonfuls onto parchment covered baking tray.
- Bake at 350 degrees for 9-11 minutes.
