Layered Up Nacho Dip
This delicious layered up nacho dip has three, five, seven, or nine layers. It really all depends on how you put this recipe together. There’s the beauty of this recipe, you don’t have to count the layers, because nobody else will be – they’ll be too busy eating!
At least, that was my experience at the family gathering last weekend. I took this dish and everybody was saying “oh, ah” and “wow, delicious” but they didn’t try to figure out the number of layers.
You’ll be able to whip this recipe together quickly too, because it relies on #ConvenienceCooking ingredients.
The most intensive part of this recipe was probably preparing the rice according to package directions. And if you can heat a skillet and measure water, you’ve got that part under control!
I told you this was easy!
The rest of the recipe directions involve some chopping, slicing and spreading. I think we can all manage that under even the most stressful cooking conditions. (At my house, that means stepping over dogs, chasing cats out of the kitchen and warding off a hungry, snack seeking husband.)
My family loved this dip so much … the little bit that was left at the end of the day was claimed by my mom. I didn’t bring home any left overs!
Now, remember, I have a large family. You may want to use this recipe if you are inviting over a crowd, attending a potluck at work or tailgating with your football fan group.
If you’re planning a dish to share with only 4 other people, you might consider dividing this recipe in half and using an 8×8 dish.
I lost count at 20 heads last weekend at mom’s. Of course, some of the little ones were running all over and I wasn’t certain if I counted them all, counted twice or missed a few. We had three generations on site and it wasn’t even all of my immediate family. I told you it was a large family!
Because of the varied ages and tastes, I didn’t make this dish with anything carrying a lot of heat. I used mild salsa and served the jalapenos on the side. If your family likes their spice, you can add the hotter peppers as a layer to this dish and select a hot / flame throwing salsa.
I’ve found allowing people to control the heat level on their personal serving works best for large groups. That way nobody feels left out because they can’t stand the heat.

Make It a Meal:
I served this dip with the trusty nacho chips. You could use celery sticks, pita chips, crackers, or just eat it by the spoonful. We had a cookout with main dishes of chicken, bratwurst and hot dogs.
You can serve this dip alongside any cookout or tailgate dishes. Or, if you’re looking to plan a Tex-Mex night, consider: Spinach Mushroom Quesadilla, Chicken Fajita Soup, Chili Spiced Crackers and homemade Sweet Pepper Salsa.

Layered Up Nacho Dip Recipe
Ingredients:
- 2 15 oz cans Refried Beans (4 cups)
- 1 6 oz box of Mexican Rice, prepared (makes approx 4 cups)
- 15 oz Nacho Cheese Sauce (approx 2 cups)
- 8 oz Tomato Salsa (1 cup)
- 8 oz Sour Cream (1 cup)
- 4 oz Black Olives, sliced (1/2 cup)
- 2 Green Onions, sliced
- 1/2 c Shredded Cheese
Recipe Directions:
- Layer all ingredients in a 9×13 casserole dish or other large, flat dish.
- Start with the Refried Beans and press them over the entire bottom of the dish. Use a wooden spoon or spatula to help smooth the beans out.
- Add the prepare Mexican Rice, followed by the Nacho Cheese Sauce. These layers spread fairly easily over the beans.
- Drop spoonfuls of Sour Cream evenly over the cheese. Lightly spread the sour cream so that it covers most of the cheese. Don’t worry if you have cheese mixing in with the sour cream layer.
- Add the Salsa and push it to cover most of of the sour cream. It will reach mostly to the edges of the pan.
- Sprinkle the Olives, Green Onions and Shredded Cheese evenly over the top of your dish. Serve with nacho chips or other dippers.

Layered nacho dip is a weakness of mine. We don’t like olives but they’re easy enough to pick off or leave out. Thanks for a great recipe!
Olives are a love / hate item, aren’t they? I put them on top especially so they would be easy to pick off if people don’t prefer them. If you know your crowd doesn’t like em, leave em off!
My hubby is my biggest obstacle in the kitchen, always wanting to lick the spoon or taste the batter of what I am making…ha! I love the black olives in your version, so many of the layer dips don’t have them!
Husbands can be so helpful and supportive … all the while blocking access to the exact pot or ingredient we need. LOL Mine thankfully is a good sport about the whole thing. As for the olives, if you love them, double up!

Tail gate season leads right into Halloween, into Thanksgiving, followed by Christmas and New Years … you’re right, tis the time of year for extra gatherings. Take this dish to one or two and you’ll not worry about bringing home left overs.

I love a good nacho dip and I make it often at home. I have never tries using Mexican rice in my dip. I will try that next time as it will have a great texture.
