Hearty Chicken Soup with Accent
When temperatures drop soup is on the menu. This hearty chicken soup with accent is made in the slow cooker and just full of flavor.
Shredded chicken, spiral noodles and some vegetables swim in a broth that is brimming with spices. Sounds complicated, doesn’t it? It’s so easy!
There are two secrets to this soup, one is the use of chicken drum sticks. Slow cooked in broth, the meat just falls off the bone and is so easy to shred.
Dark meat has a whole lot more chicken essence than white meat, so it’s perfect in this soup. Talk about giving up all the healing properties into the chicken broth!
You can see those pieces of chicken meat and that broth. It is every bit as rich and tasty as it looks.
The second secret is the spice packet. Yes, I used a prepackaged spice packet for this soup. The packets are found in the Hispanic food aisle in my grocery store. Easy to use and just exploding with spices, I use them in a few recipes.
I took this close up picture so you can see the label, size/weight and ingredients. It looks huge in this photo, but trust me, it’s smaller than a Post-It note.
Coriander and Annatto are the main seasonings in this packet of Accent Seasoning Culantro Y Achiote. Yes, before you get all excited and worried about the other seasonings – full disclosure here – Monosodium Glutamate is another primary ingredient.
Allergy and sensitivity alert!
Nobody in my family is sensitive to MSG, so we use it without worries. If you have concerns, you can substitute 1/8 teaspoon of each: Coriander, Annatto, Paprika, Turmeric and Cumin.
Variations:
Turkey from your holiday bird can replace the chicken. If you have left over vegetables in the fridge, you can toss them in the pot when you add the noodles.
Other shapes of pasta work also, as will rice or quinoa.
Make It a Meal:
Serve a large bowl of this hearty chicken soup with Accent with grilled cheese or slices of bread. Add a salad if you need more veggies in your life.
Other options on the side: quesadilla, cornbread, savory onion bread, pepperoni snack bites or pull apart pizza.

Ingredients:
Chicken drum sticks, water, celery, Bay leaf, Accent, carrots, peas, noodles, onion soup mix
Recipe Directions:
Slow cook the chicken, celery, and spices. Shred the meat. Return to pot and add carrots, peas and noodles.

Ingredients
- 6 Chicken drumsticks
- 2 quarts Water
- 1 cup Celery diced
- 3 Bay leaves
- 2 Accent packets coriander and annatto seasoning
- 1 Onion soup mix pack
- 1 cup Peas
- 1/2 cup Carrots
- 1 1/2 cup Pasta boiled
Instructions

Place chicken, Accent packets, Bay leaves and water in slow cooker. Heat for 8 hours on low.

Remove chicken from crockpot and shred meat, disposing of bones. Return shredded meat to pot.

Add cooked pasta, peas and carrots to crock pot.

Add Onion soup packet.

Heat through and serve.
