I’ve had some soups from the can that were super fast to warm up and hit the spot when I was hungry. This ham and bean soup for two is closer to home made, but relies on #ConvenienceCooking ingredients.
I used packaged diced ham from the grocery store and canned beans to speed this recipe up. I love the convenience of canned beans! They’re so easy to use and you can find all varieties of beans with different sodium content.
If you start with dried beans and soak them overnight, then put them in the slow cooker all day, you’ll be ready to start this recipe when you get home from work.
As a working single mother of two, I usually relied on the cans of beans. That was just easier for me when I didn’t take time to plan our supper. Although, there’s really no work to a slow cooker of beans, except the planning ahead part!
Make It a Meal:

Ingredients:
Ham, beans, carrots, onions, and some water.
Recipe Directions:
Dice, chop, sweat, simmer – that’s it!
Ham and Bean Soup for Two
Ingredients
- 1 small Onion
- 1 Carrot
- 1/2 cup Ham
- 2 cup Black eye peas or navy beans
- 1 cup Water
- 1 cup Refried beans
- salt & pepper
Instructions

Dice the onion into very small pieces.

Chop the carrot into small pieces.

Dice the ham into small pieces.

Place a pat of butter in the bottom of a small saucepan, heat until melted. Add the onions and carrots.

Cook until the onions are translucent and the carrots are soft.

Add the ham, black eye peas, water and refried beans. Simmer until warm through.

Add salt and pepper to taste.
