Gooey Cheesy Potatoes Recipe
Potatoes and Cheese should be two of the main food groups. This gooey, delicious, creamy, warm dish is a top favorite all around the country.
I challenge you to attend a church potluck, school PTA carry in, or after funeral family gathering and not find a dish of these potatoes in one form or another.
In fact, I know i some parts of the country the recipe named “Funeral Potatoes”.
Cheesy Potatoes Recipe
Ingredients:
24 oz. frozen Hash Browns
1 med. Onion
16 oz. Sour Cream
1 1/2 c. shredded Cheddar Cheese
Salt & Pepper
Directions:
Preheat oven to 350 degree Fahrenheit. Dice the onion. Mix the onion, sour cream and cheese together. Stir in the hash brown potatoes. Spread in a 9 x 13 baking dish. Bake at 350 degrees for one hour.

Make it a Meal: Serve with sloppy Joe sandwiches, hamburgers, or a salad.
If you want, this dish makes a great addition to a weekend brunch. Serve pancakes, bacon, sausage and fruit along with the cheesy potatoes. Add some coffee and tea, your neighbors will want to join you!

Variations: If you want to turn up the heat, dice some banana peppers and toss in the mixture! Some diced red pepper will add a pretty color. Double the cheese if you are living dangerously.
Another option for baking this recipe is to use a muffin tin to bake the potatoes into individual servings. This makes a pretty presentation when placed on a plate.
Also, those individual muffins are easy to wrap up and store for another day. This works well for single folks who are overwhelmed with a whole pan to eat at once.

Cheesy potatoes will keeps in the refrigerator up to two weeks, as long as you have it in an airtight container. The dish will also keep up to one month in the freezer. Thaw in refrigerator completely before serving. Reheat in the oven or microwave before serving.
