Easy Oven Roasted Zucchini
This easy oven roasted zucchini is the perfect side dish for any dinner. It’s so simple, it only requires three ingredients!
And the process? Super simple as well. Even the most novice cook can make this dish. Three steps are all it takes.
I mean, three ingredients and three steps … come on, people, why haven’t you made this already?
I know not everybody is a zucchini fan. But for those of us who are, this dish makes quick use of a medium sized vegetable. I know, your neighbor has stashed a couple of them on your porch already, right!
Truly, if there is a garden vegetable that is more prolific, I’m not sure what it might be. Sure, some summers you’re over run with tomatoes and other years, it’s peppers. But the winner, year over year, for turning out the most produce has got to be zucchini.
Perpetually, my neighbor planted a huge garden. He’d sell tomatoes at flea markets and enter some specimens in the fair. Zucchini are a great garden partner for tomatoes … and somehow I think the zucchini he planted out produced the tomatoes.
At least, he gave us way more samples of garden zucchinis than he ever did tomatoes. That might be because zucchini didn’t sell at the flea market, I suppose.
I’ve made ever so many loaves of zucchini bread, shredded it into pasta sauce and fried it up with onions. But this recipe has to be the winner of simplicity. In fact, it’s simple enough to make as a last minute contribution to the holiday menu.
Variations:
If you want to jazz this recipe up a bit, you can toss some chunks of summer squash and onions in the mix.
Adding a sprinkling of red pepper flakes, Italian seasoning or Taco seasoning blends will give this a whole new flavor.
Make It a Meal:
Add this side dish to your fanciest holiday meal or serve alongside the evenings grilled supper.
Other sides you can incorporate to the meal: Oven Roasted Onions, Baked Winter Squash, Cornbread, New England Baked Beans, Broccoli and Onions.

Oven Roasted Zucchini
Simple and tasty, this side dish will go with your favorite grilled dinner as easily as the holiday meal.
Ingredients
- 1 pound Zucchini
- 2 TB Olive oil
- 1 tsp Salt
Instructions

Preheat oven to 400 degrees Fahrenheit.

Cut zucchini into one inch pieces.

Toss zucchini with olive oil in a bowl. Make sure all pieces are oiled.

Spread on a rimmed baking sheet and sprinkle with salt.

Bake at 400 degrees for 40 minutes or until tender.

Zucchini gets a bad reputation. I think it’s because there are so many gardens overflowing with it!
