Easy Cheesy Olive Dip
I love appetizers! I love dips! I love cheese and olives! Is it any surprise that I love this easy cheesy olive dip? It truly is the most perfect dip I’ve found.
When I say “easy” – I mean if you can shred cheese and measure ingredients, you can make this dip.
If you want to purchase packaged shredded cheese, then you’re one step ahead of the game. I used Gouda and mozzarella cheeses because they are great melting cheese.
The flavor of this dip comes largely from the olives, with a little help from the red pepper flakes. Gouda and mozzarella are mild flavor cheese which provide a nice base for the salt and spice accents.
This recipe calls for one teaspoon of red pepper flakes. This gives the dip a mild bite. If you like a lot of kick in your dips, you’ll want to increase the quantity of red pepper flakes.
We’re a mild salsa type family and the one teaspoon was about right for us. If you like spicier salsa and things like sriracha, you’ll want to use more pepper.
My version was inspired by this recipe from Buns in My Oven.
I served this dip with some plain crackers, because I really wanted the flavor of the dip to shine. I do think this cheesy olive dip would be really good on rye bread or crackers, with veggies or even spread on bagels.
I used a bit of the leftover dip as a topping on my hamburger the next day. Let me tell you, that was nearly genius!

Make It a Meal:
If you’re not worried about balancing your diet for one meal, just pick up a spoon and start scooping this cheesy olive dip onto crackers and munch your way through dinner.
Haven’t we all that those nights were dinner consisted of a glass of wine, some cheese, olives and crackers? Some of my other favorite dips are: Easy Creamy Cilantro Lime, Red Pepper Shrimp, Layered Up Nacho and Bacon Ranch Cheese Spread.

This dip looks really pretty in my blue casserole pan. You’ll want to put your cheesy olive dip in an oven safe dish. I’ve got a few Pyrex dishes that I use, but any cast iron skillet or baking dish will work.
If you bake the dip in one dish, then scoop it into another for serving, it won’t look as pretty, however will taste just as great!
I haven’t tested this recipe in the crock pot, but given the oven bake time is just to melt the cheeses together, I’m positive you can make cheesy olive dip in the crock.
