Dilly Carrots
Dilly carrots make a good side dish to accompany most main dishes. They are tasty, pretty and easy to make.
Roasting carrots in the oven keeps the flavor and even intensifies it. Adding the dill spice gives them a bit of extra flavor without being overwhelming. This recipe has two steps and three ingredients, it doesn’t get much easier!
Carrots are a good choice for a side dish for two main reasons:
- They are healthy. Full of vitamins and energy.
- People like them. Carrots are a familiar vegetable to nearly everyone.
We’ve all heard the story that carrots help you see better and while there’s a fair amount of debate on that point- you can’t argue that they have more vitamins than many foods we eat!
Familiar foods are comforting. You’ve had that plate served to you containing something unfamiliar and new. You’re a little nervous about eating it aren’t you? Carrots won’t treat you like that. You know carrots and how they taste. Comfort food.
I made these dilly carrots in a cast iron skillet, mostly because I have several sitting in the kitchen at arm’s reach and I use them a lot. (like A. Whole. Heck. Of. A. Lot.!)
I think if I had to leave my home in an emergency, I’d take my cast iron skillets and my crock pot. – My husband would grab the coffee pot and we’d be all set!
Variations:
If you’re not a fan of dill, you can use your favorite spice. Thyme, oregano or rosemary work equally well. If you want a bit of a different flavor – toss in some cinnamon and cumin.
I used baby carrots mostly because I can get them on sale for about a dollar at my local grocery store. You can use large carrots, sliced into half inch pieces.
Make It a Meal:
I served the dilly carrots with my Cottage Pie. They are a great side dish for any meal.
Other sides you can put on the table: roast broccoli and onions, oven roasted onions, potato salad or loaded baked sweet potato.

Baby carrots, olive oil, dill.
Recipe Directions:
Toss the baby carrots in the olive oil and dill. Bake.
Dilly Carrots
A great side dish for your favorite supper, dilly carrots are easy to make. They're also kid tested and approved!
Ingredients
- 1 lb Carrots
- 1 TB Olive Oil
- 1 TB Dill
Instructions

Preheat oven to 350 degrees Fahrenheit.

Toss carrots in olive oil, sprinkle with dill.

Place in oven proof dish.

Bake at 350 degrees for 45 minutes.

I used a small cast iron skillet, however, you can use any oven proof dish.Â
