Corn Nacho Salad ~ Recipe

I used to work in an office building that had a cafeteria in the lower level. Not many offices provide that sort of service to the staff any more.
I think it was a bit of a throw back to the way things used to be done, but also a consideration to the fact that the closest restaurants were 15 minutes away.
If employees were going to eat lunch during their half hour break, having a food service on site made sense.
One of the salads they served in this cafeteria was corn nacho salad. You can bet that was an item that disappeared from the salad bar fairly quickly. If you weren’t in the early part of the lunch time, you’d miss out.
I often placed a scoop of this salad on my lunch tray, and one day decided to sort out the ingredients so I might make my own version at home.
I don’t claim to have the full secret recipe here, just my interpretation. I think it turned out pretty close. Regardless, it’s tasty and crunchy.

Corn Nacho Salad Recipe
Ingredients:
Corn, frozen/thawed or canned/drained. Green Pepper and red, yellow or orange peppers if available. Onion and Nacho Chips. Cheddar Cheese, Ranch Dressing and Chili Seasoning for flavor.
Directions:
Dice, mix, chill and serve.
Corn Nacho Salad
Simple to make, full of flavor.
Ingredients
- 2 cups CornÂ
- 1 small Green Pepper
- 1 small OnionÂ
- 2 cups Nacho ChipsÂ
- 1 cup Cheddar Cheese shredded
- 1/2 cup Ranch Dressing
- 2 tsp Taco Seasoning optional
Instructions

Dice the pepper and onion. Crush the nacho chips.

Mix all ingredients together.

Chill for one hour.

Serve.
Recipe Notes
If you have snack sized bags of nacho chips, use two of those for easy measuring.Â
If you have red, orange, yellow peppers, they add some great color and a slight bit of sweetness to the salad.Â
