Chili Cook Off Entry
Like so many places across the country, my office is having a chili cook-off contest. It’s that time of year. The weather sure makes me want to scoop up a bowl of warm chili!
I’ve made two different recipes to enter in this contest … one red and one white … The organizers said there was a prize for the best chili. I’m thinking bragging rights is enough incentive to enter a contest like this!
Red Chili Cook Off Recipe
1 jar medium salsa
1 cup diced green peppers
1 can yellow corn, drained
1 jar enchilada sauce
1 lb ground hamburger, browned
1 can black beans, drained
2 cans chili beans
1 can baked beans
2 cans diced tomatoes
Combine all ingredients in 4.5 quart crock pot and heat.
White Chicken Chili Cook Off Recipe
3 chicken breasts, cooked and shredded
1 can chicken broth
1 can sliced mushrooms, drained
1 can hominy, drained
1 can navy beans
2 cans butter beans
1 can cream of chicken soup
1 can sliced potatoes, drained
Combine all ingredients in 4.5 quart crock pot and heat.
Serve with a variety of crackers, nacho chips, corn bread, biscuits, banana and jalepeno peppers, sour cream, shredded cheese or other preferred topping. Invite the entire office because there’s enough chili in these two pots to feed everybody!
