Chicken Bacon Ranch Casserole
Potato casseroles are great for picnics and potlucks. This variation includes all time favorite flavors – bacon, ranch and chicken!
The addition of the chicken to this pan moves a side dish into main dish territory. All you really need to round out a meal with this dish is a bit of fruit.
A friend of mine recently shared a similar recipe with me. She commented that it was not quite what she hoped for. I changed it up a bit and this is the result. The original recipe called for canned corn and peas. I like adding frozen mixed vegetables, for the variety and color.
I also reduced the amount of liquid, as the original recipe was rather soupy. I don’t mind having some gravy in my casserole, but I do want it to stay on the plate when I serve it.
Chicken Bacon Ranch Casserole Recipe
Ingredients:
2 c Chicken, diced
3 c Mixed Vegetables
½ c Ranch Dressing
1 c Sour Cream
¼ c Milk
10 oz Cream of Chicken Soup
10 oz Hash Browns
1 c Cheddar Cheese, shredded
5 oz Bacon Bits
Directions:
Preheat oven to 400 degrees Fahrenheit. Cook chicken in skillet on stove top. When cooked, dice into half inch pieces. In a 9×13 baking dish, layer the mixed vegetables and the diced chicken. In a bowl, mix the dressing, sour cream, milk and cream of chicken soup. Spread over chicken and vegetables. Please the hash browns on top of the sauce. Top with shredded cheese and finish with bacon bits. Bake at 400 degrees for 30 minutes.

Make it a Meal:
Serve this dish with hamburgers and hot dogs. Add a salad: Tomato & Corn Salad or Apple Salad.
Variations:
If you don’t care for hash brown style potatoes, use tater tots or diced potatoes instead. Add some diced onion if you want a little more flavor. Toss in some diced green and red peppers for some additional color.
If you are a bacon lover, feel free to add more to the mix, add a layer of bacon beneath the potatoes as well as above!
