Cheesy Vegetable Casserole
This cheesy vegetable casserole is nearly the simplest side dish you can imagine. I mean, it’s almost as easy as grabbing something from the deli.
This dish uses three ingredients. Only three! The steps to make it are basically “dump and bake”. That means no matter what kind of day you’re having, you can make a cheesy vegetable bake for supper.
I’ve served this dish for the kids, taken it to family gatherings and even used it as my contribution to the carry in dinner at work. Everybody loves it. This is an “bringing home an empty pan” dish.
It’s also one of those casseroles that has people begging you for the recipe.
You can share the recipe, or you can revel in the glory of their jealousy and admiration.
But as simple as the recipe is, why not share it?!
Of course, if you’re going to take this to a large gathering, you’ll want to double or triple the recipe. This recipe makes six generous servings, so it will stretch a bit to feed 9 or 10. But if you’re feeding a crowd, you’ll need reinforcements.
If you like, sprinkle the topping with some chili powder or paprika prior to baking. That will add a bit of spice and some color to this dish.
But, you don’t need to mess with perfection.
California blend vegetable casserole without extra spices is nearly perfection. Just look at the orange, green and white colors of those vegetables!
A friend of mine makes a cheesy vegetable bake using the bag of mixed vegetables in the freezer case. You know, the one with square pieces of carrots and tiny green beans.
That vegetable mix would work well in this recipe. I don’t know what my friends’ secret recipe is … but it’s plenty yummy!
Variations:
While this recipe features a bag of vegetables called “California Blend”, you can really use any frozen vegetables you like. I’ve made this with plain broccoli, plain cauliflower and mixed vegetables.
It’s quite a versatile recipe that way.
The frozen veggies are the short cut method. If you have fresh broccoli, cauliflower and carrots: clean and cut into one inch pieces and use about two cups per vegetable.
Make It a Meal:
You can serve this cheesy vegetable casserole as a side dish with nearly any meal you make. It’s a popular item on the “sides table” at Thanksgiving, Christmas and Easter in my family.
Other sides my family loves: Corn Pudding, Green Bean Casserole, Roast Carrots and Onions, Oven roasted Broccoli, and spiced Mushrooms.

Recipe Directions:
Place ingredients in casserole pan. Bake.

Ingredients
- 15 oz California Blend frozen vegetables
- 15 oz Cheese soup condensed
- 15 oz French fried onions
Instructions

Preheat oven to 350 degrees Fahrenheit.

Place frozen vegetables in 8x8 baking dish.

Spread condensed cheese soup over vegetables. Do not dilute.

Sprinkle French fried onions over top casserole.

Bake at 350 for one hour.
