Broccoli Bacon Cheese Salad
When planning a picnic, my friend Sharon always includes a broccoli salad. I have often thought I need to ask for her recipe, but I am too busy eating to talk.
I designed this recipe based on the flavors in her salad. I call it the BBC Salad. My husband gives this salad his stamp of approval, so I know it is good.
I like this recipe because it only uses four ingredients. You know, I am all about keeping the food simple! The cold crunchiness of this salad makes it a good dish to serve at picnics, when you have got warm sunshine, hot burgers on the grill and family on the deck.
If you want to change up the flavor, you could use a salad dressing instead of the mayonnaise. But I like the simplicity of using mayonnaise as the dressing.
Broccoli Bacon & Cheese Salad Recipe
Ingredients:
10 oz Broccoli
1 ½ c Cheddar Cheese
3 oz Bacon
1 ½ c Mayonnaise
Recipe Directions:
Place all ingredients in a bowl. Toss to coat with mayonnaise. Chill 2 hours.

Make it a Meal:
Add a hamburger and baked beans for your picnic supper. Serve with Simple Bean Salad or Grandma’s Pink Fluff.
Variations:
Cauliflower works well instead of the broccoli in this recipe. Also you could use the broccoli, cauliflower, and carrot mixed frozen vegetables. Add some diced ham to make this a full luncheon meal.
If you use frozen vegetables, allow to thaw before adding to recipe. If you are in a hurry, place the frozen vegetables in boiling water for 2 minutes. Remove from boiling water, strain and place vegetables in ice water to chill.
