Blueberry Coffee Ring
Weekends are made for lazy mornings and lots of coffee. Of course, if you’re drinking coffee, you want something to go with it. This coffee cake will do the job.
Sweet blueberries, tender biscuits, a sprinkle of sugar and a pat of butter – that’s all you need to be in business.
This home baked recipe looks like something my great grandmother would have made from scratch. In reality, it features convenience ingredients that my grandmother would love!
The secret? Frozen blueberries and pre-made biscuits.
The berries, you’ll find them in the freezer case at your grocers. I love that I can find fresh frozen blueberries any time of year! In blueberry season, I would use fresh berries in this recipe. If you grow your own berries, then pile them on!
The biscuits, these are the package, canned, layer, honey flavored type. The ones in the refrigerator section that pop open after you peel off the label. You can use any type of packaged biscuits, but these are my favorite.
Topped with some blueberry syrup, this coffee ring is a perfect dish to serve at your next brunch.
If you’ve got any leftover, serve it for dessert with a scoop of vanilla ice cream.
The trick to making this coffee ring look so great, is using a Bundt cake pan or an Angel Food cake pan.
By layering the biscuits around the bottom of the and overlapping a bit, it is easy to achieve a fancy looking dish. There really isn’t much effort to this recipe.
Blueberry Coffee Ring Recipe
Ingredients:
1 tube of Layer Biscuits.
2 c. frozen Blueberries
1/2 c. Sugar
4 TB. Butter
Directions:
Preheat oven to 350 degrees Fahrenheit. Spray Bundt cake pan with non stick cooking spray. Sprinkle pan lightly with sugar. Open biscuits and separate each one in half horizontally. Begin layering the biscuits around the bottom of the pan, overlapping as you go. Place berries between biscuits. Sprinkle remaining sugar over biscuits. Place pats of butter around top of biscuits. Bake at 350 for 25-30 minutes.

Make it a Meal: Of course, coffee is the best beverage to serve with a coffee ring. Tea and milk go well also. Add a fresh fruit plate or some eggs and you’ve got a breakfast worth lingering over.
Variations: Replace the blueberries with strawberries or raspberries. Use a cream cheese frosting instead of the blueberry syrup to top the rolls.
For individual servings, use a cup cake pan. Cut each biscuit into quarters and place in pan, with berries in each cup.
Blueberry Syrup Recipe
Ingredients:
1 c. Sugar
1 1/2 c. Blueberries
Directions:
Place sugar and berries in a small saucepan. Bring to a boil, stirring constantly. Turn heat down to medium and allow syrup to maintain a rolling boil for 3-5 minutes. Remove from heat. Allow to cool for 5 minutes. Drizzle over coffee ring.
