Banana & Peanut Butter Stuffed Pancakes
Some dishes have a way of taking us back to our childhood. Other foods easily transport us to a special time or place. We all have foods that we associate with good memories. Pancakes are one of those foods for me. Peanut butter and bananas are another pair of foods that I relate to growing up. Add those together for Banana & Peanut Butter Stuffed Pancakes and you’ve got a memory worth sharing.
In my family, we combine all three of those ingredients into one hearty breakfast. While it’s a dish that has become a family tradition, apparently it’s unknown to most people. Banana & Peanut Butter stuffed pancakes are a weekend staple at my parent’s house.
When I was a girl, we ate a lot of peanut butter and a lot of pancakes. I imagine part of the reason was the budget friendly cost of those two items. When you’re trying to feed five children, you have to be budget conscious!
I know part of the reason was because all five of us children loved this combination. It’s a favorite meal for all of us to this day. And we’ve passed that appreciation on to our children.
The grandkids love going to the Farm for pancakes. In fact, the older ones (able to drive themselves) have been known to hatch a plan to all meet up at grandma’s for PANCAKES! The word goes out over Facebook and a phone call is made to warn grandma. Then on a Saturday morning, the kids descend on the farm.
My dad also loved those times. Even when his health was failing, he would stand at the kitchen counter, turning pancakes on the griddle as long as somebody was willing to eat. And, the kitchen didn’t close until everybody had eaten as many pancakes as their bellies would hold.

Make it a Meal:
Serve with a glass of milk and a serving of juice to have a complete breakfast. For a big weekend brunch, add some bacon or sausage, a cup of fruit and plenty of hot coffee.
There are many recipes for pancakes out there. I will let you choose your favorite pancake mix. I’ve found the boxed mixes that are labeled “Complete” and only require the addition of water to be my best recipe for pancakes.
I have a sister who uses a recipe from the Red & White Checked Cookbook. I’ll admit her pancakes are very good! They probably are cheaper than mine, given that she’s buying the ingredients in bulk. But I remain a fan of the convenience of the boxes.
Variations:
Replace the peanut butter with another form of butter – almond or hazelnut butters work well. The ever popular Nutella makes this a decadent dish, with the chocolate flavor!
As I mentioned, we grew up eating our pancakes slathered in peanut butter. We ate peanut butter at a lot of meals. It was a cheap form of protein, and easily portable. I imagine I carried a peanut butter and jelly sandwich in my school lunch box most of my school days.
I was surprised to learn that not all families put peanut butter on their pancakes. In fact, most people only use butter and maple syrup on their pancakes! I think I was as surprised to learn that as a student as others were to learn that we used peanut butter!
Some of our friends have converted to being peanut butter eaters, but not everybody agrees with us. I know a few of my friends have tried this banana & peanut butter stuffed pancakes recipe and felt it was too sweet or too stick to the roof of their mouth. To that, I only have two words: Hot Coffee!
Banana & Peanut Butter Stuffed Pancakes Recipe
Ingredients:
Pancakes
Peanut Butter
Banana
Syrup
Recipe Directions:
- Place a hot pancake on your plate.
- Using a knife, spread a generous portion of peanut butter over the pancake.
- Slice 1/2 of a banana into pieces on top of the peanut butter.
- Repeat with another pancake, as many times as you like.
- Top entire stack with maple syrup.

As for bananas, there’s not many foods that practically evaporate at our house! I’m thankful the price of bananas remains at cents per pound – since we eat several bunches every week!
