Baked Spaghetti Leftover Make Over
A great way to use up left over spaghetti is to make Baked Spaghetti. Just add a few ingredients and you’ve made your leftovers into a whole new meal.
Such an easy way to convince your family they aren’t eating the same dish over and over again, this baked spaghetti mixes up quickly and will disappear from the table.
I’m always looking for economical meals. Translation: cheap food. As a single mother raising two teenagers, I needed to maximize my grocery budget into meals that would fill up the bellies of active kids.
Spaghetti found its way on the menu nearly every week.
Sometimes we would eat the leftover spaghetti warmed up and served the same way as it was originally. Seriously, teenagers can eat and they usually don’t mind if spaghetti is on the menu as a repeat item.
It’s a carb loading athlete’s favorite meal!
However, there are times when I was tired of eating the same thing three nights in a row. So I decided to jazz up the menu and make over the leftovers. Since we always have pepperoni and shredded cheese in the house, this pizza flavored pasta was a no brainer!
In fact, the recipe below doesn’t even use the leftover spaghetti. You can skip the first meal and dive right into the baked spaghetti menu item.
Now that the kids are grown and out of the house, my husband and I are faced with a bit of a challenge. Mostly, the challenge is mine: Make spaghetti in small quantities.
I struggle with that. It seems like I only know how to make a giant pot of spaghetti. So during the initial making, I automatically create leftovers.
There’s no way the two of us are eating an entire pound of noodles and two jars of sauce. The solution is to move directly to portioning some of the pasta into the baked spaghetti menu item.
Make It a Meal:
Add some cheesy olive bread, a crispy garden salad, a cup of warm mushroom soup and finish the meal with a tall and creamy cheesecake.

Ingredients:
Use up some left over spaghetti, or make a new pot full. Noodles, pasta sauce, pepperoni and two kinds of cheese.
Recipe Directions:
Layer the ingredients in a dish and bake it until bubbly.
Baked Spaghetti

Ingredients
- 1 lb Spaghetti Noodles
- 32 oz Pasta Sauce
- 8 oz Pepperoni slices
- 2 cups Mozzarella Cheese shredded
- 1/2 cup Parmesan Cheese grated
Instructions

Preheat oven to 350 degrees Fahrenheit.

Prepare pasta according to package directions.

Drain pasta, toss with pasta sauce.

Layer half the pasta in baking dish. I use a 9x9 square casserole.

Spread half of mozzarella and pepperoni over pasta.

Repeat layers with second half of ingredients.

Top with Parmesan cheese.

Bake for 30 minutes or until bubbly.
