Bacon Pimiento Egg Salad
Egg salad is definitely a summer time sandwich fixing! Did you know there are many ways to prepare egg salad? Did you know that you can fancy it up a bit?
This recipe combines a couple of classics – Bacon & Eggs!
Pimientos are included for a dash of flavor and a splash of color.
It’s a simple summer sandwich, with a twist of flavor to entice your meat loving family members to eat a protein full meal.
My grandma Chase made egg salad sandwiches for my sister, father and I to eat on a return trip from visiting grandma and grandpa in Vermont. Her egg salad was simple. The bread was coarse, New England brown bread.The sandwiches were wrapped in wax paper. Dill pickles were included in our picnic package.
Dad loaded my sister and I into the back seat of a rented, four-seater airplane and we took off on about an 8 hour flight. Since the small plane (probably a Cessna) flew slightly faster than we would have driven in the car, the trip was going to be several hours faster by plane.
However, we had to stop at a few small airports along the flight plan to refuel and use the bathroom. At one of those airports, we pulled out the picnic lunch and ate our sandwiches. My sister and I drank Coke from a vending machine (8 oz glass bottles). Dad had a cup of black airport coffee – strong and served in a Styrofoam cup.
What a great lunch we had!
Bacon & Pimiento Egg Salad Recipe
Ingredients:
12 lg Eggs
1 c Mayonnaise
2 TB Mustard
3 TB Pimiento
5 oz Bacon Bits
Recipe Directions:
Hard boil and cool the eggs. Peel and slice eggs into medium mixing bowl. Add the mayonnaise, mustard, pimiento and bacon. Stir to mix well. Chill.

Make It A Meal:
Serve in a hot dog bun, on wheat toast or bagels with lettuce and pickles for lunch time sandwich. Serve with crackers as an appetizer. Serve over lettuce and chopped vegetables to make a salad.
This sandwich goes well alongside Beef Vegetable Soup and followed by Fruit Cocktail Cake.
If you’re planning to pack this egg salad for a picnic, I recommend using a salad dressing instead of real mayonnaise. Remember, real mayonnaise is subject to spoiling when exposed to warm temperatures. The salad dressings that look like mayo are similar in flavor and won’t spoil.
If you are a purest where mayo is concerned, then don’t substitute ingredients. Instead, make positive you have plenty of cold storage on hand and don’t let the heat get to your sandwiches or you.
