Amazing Sour Cream Potato Salad

Do you love baked potatoes with sour cream and chives? This summer salad will fill your desire for that traditional dish. The added bonus is that you can eat it even though temperatures and humidity might be in the upper end of the scale.
You could even sprinkle some bacon bits over the top if you really want to entice your family to dig into the bowl! I promise they’ll love it either way!
Sour Cream and Chive Potato Salad Recipe
Ingredients:
- 4 large Potatoes
- 1 lb diced Ham
- 1 c Sour Cream
- 1/2 c Chives
Recipe Directions:
- Cut potatoes into half in pieces.
- Boil potatoes in water until you can pierce them with a fork.
- Drain potatoes and cool.
- Mix all ingredients and refrigerate one hour before serving.

Where I live, potato salad is found at nearly every picnic, cookout, barbecue and potluck. I think that’s because the folks who settled this area are primarily of Middle European stock and love hearty food.
I think the problem with many potato salad recipes is that they are too heavy. A serving the size of a half cup measuring cup will leave you feeling weighted down.
This recipe seems much lighter and leaves room for the grilled meats, fresh vegetables and homemade pies that appear at the same picnics. It’s a salt free recipe, because ham is usually salty enough to bring this dish to life.
If you are looking for more flavor in your salad, sprinkle black pepper over the top. You’ll be very happy!
Another deviation from the local traditional potato salads is that this recipe doesn’t include mustard or onions. Although, you certainly could add some diced onions to this salad without any ill effects!
Stored in the refrigerator, leftovers will keep up to a week. This salad doesn’t freeze well, so you’re better off making smaller portions more frequently than attempting to make a large batch and saving some for later.
