Amazing Pepperoni Snack Bites
Holiday parties, potlucks, carry-in dinners and family gatherings are on my calendar this month. I will bet they are on yours, too. I put these quick Pepperoni Snack Bites together for a gathering the other day, and they were so popular, I had to share the recipe!
The beauty of this recipe is the use of prepared dough and pre-sliced pepperoni. The whole recipe comes together in about half an hour, so you don’t have to slave over a hot oven, and you will still be the hit of the party.
Make it a Meal:
Fresh from the oven is the best way to eat these snacks. Add a bowl of soup or a salad and you have got a light meal.
Variations:
Replace whole olives with chopped olives. If you prefer black olives to green, use them instead. Do not care for pepperoni? Use a bit of ham, turkey or chicken.
I wanted to use more cream cheese, but the last time I indulged in my Cream Cheese Love, I ended up with melted cheese all over the pan and not in my mouth. That was a disappointment. Since I would rather have the cream cheese in my mouth, I stayed with the half a teaspoon and it worked out great!

If you are going to a large gathering, you will want to double or triple this recipe. I sprinkled a bit of oregano on top of the rolls before placing the pan in the oven.
The spice baked into the snack bite and added that little extra something. You could also sprinkle a small amount of Parmesan cheese if you wanted.
For serving as an appetizer, a small bowl of Ranch dressing or marinara sauce makes for good dipping.
I am sure you won’t have many snack bites left over, but if you do, they will keep in the refrigerator for about a week.
