A Simple Side Dish – Garlic Mushroom Noodles
Sometimes side dishes need to be tasty but unobtrusive. This dish is exactly perfect with a fancy or rich main dish. The light flavor of the fresh mushrooms blends well with the pasta, but won’t upstage your Easter ham.
I like the simplicity of this recipe for ease of preparation almost as much as for the flavor. The most complicated cooking skill required for this recipe is: boiling water. Especially if you buy the package of sliced mushrooms in the produce section. If you buy whole mushrooms, you will need to utilize some slicing skills.
If you can’t find some fresh mushrooms, you can substitute canned ones. Just make sure you drain the mushrooms before tossing with the noodles.
Spring Mushroom Noodles
Ingredients:
8 oz. Spaghetti Pasta
6 oz. sliced Mushrooms
3 oz. minced Garlic
4 TB Butter
1 c. Parmesan Cheese
Directions:
Prepare pasta in boiling water according to package directions. Drain. Toss with butter, mushrooms, garlic and cheese.

Make It a Meal: This a good side dish for Easter dinner. Serve alongside your ham or add diced leftover ham for a light supper later in the week.
Variations: Using fresh spring mushrooms guarantees great flavor. Add some color by chopping up some spring onions or toss in some peas.
Serve this pasta as a base for grilled chicken or meatballs. Add some crusty bread and you’ve got a meal.
The great thing about this dish is that it’s fairly light in flavor. That means you won’t be overwhelmed by the side dish and your guests won’t walk away feeling stuffed. Or if they do, it’s not because of this dish!
Double or triple the recipe if you’re serving a crowd. This dish is a popular item and won’t last long. Leftovers should be stored in an airtight container in your refrigerator. They will last a week if nobody finds the dish! Don’t count on using the leftovers in a second meal if your family finds the leftovers.
