Rescue Mission Beef Stew Pot Pie
Anything encrusted in a flakey pie crust qualifies as comfort food! What better way to enjoy some down-home comfort food than with leftovers?
Yes. This will be your “Ah-ha!†moment of the day when you read on.
How many times do you make a nice vat of beef stew with all of the carrots, celery, onions, potatoes, garlic, stew meat and all of the other seasonings only to have it go to waste? Well, no more from today forward!
What if you were to take those leftovers and turn them into a NEW bubbly dish that the family will be tricked into loving for another meal? Yes! It is possible, and below is the step-by-step process.

The great thing about this recipe is that you’ll get two, three or maybe even four meals out of it. The first meal or two is the basic stew. Once your family is tired of stew, either freeze it for another day when you’ll make the pot pie or turn it into the pot pie rescue mission right now!
Remember that it’s very important to vent the pie crust to allow the steam to escape. Other wise, your pie will become soggy. Venting is a simple as slicing a few lines into the top crust.
Serving Suggestions:Serve with salad or a nice artisan bread.
