Roasted chicken thighs can be a challenging menu item to make. It’s tough trying to live up to grandma’s perfect examples. Not to worry, this oven roasting process makes it easy to come close to grandma’s.
The trick is really using some simple spices. Seriously simple … as in: salt, pepper, sage, and celery seed. If you don’t already have those spices on your kitchen shelf, you can find them at any grocery store.
The other trick is a light application of oil to the skin of your roasted chicken thighs prior to placing them in the oven. I have used olive oil, coconut oil and vegetable oil. Butter or any other oil would work as well.
I use olive oil in a spray bottle, because I love how easy it is to apply just the right amount in exactly the perfect place. However, if you don’t have a spray bottle, simply pour a small amount (2 tablespoons) in a cup and apply using a pastry brush.

Chicken thighs freeze well. I usually buy a larger package than I would prepare for a meal, break it into smaller packages before freezing. I like to use plastic zip top bags with enough chicken thighs for a meal in each one.

- 4 Chicken thighs
- 2 Tablespoons Olive oil
- Salt
- Pepper
- Sage
- Celery Seed
Instructions

Preheat oven to 350 degrees Fahrenheit.

Place chicken thighs in baking dish, skin side up.

Brush olive oil over skins.

Sprinkle salt, pepper, sage and celery seed on chicken.

Bake at 350 degrees 45-50 minutes, until juices run clear.

Broil 2 minutes on high to crisp skin.
