  1. Ohhh I did not know that you can freeze celery! I usually end up throwing some of left over celery and now I will not. Thank you for practical information and wonderful recipe:D

      When you freeze the celery, plan to use it for soups and casseroles. It loses all the crunch when thawed, so it won’t be good on a veggie tray … but keeps all the flavor to add to your soup.

  2. Must try this! It sound rather werd to me since I’m not the biggest celery fan! But I don’t like to throw them away either!Sounds like something worth trying 😉

    • Simon, I’ll admit, I’m not a celery fan either, but this soup was a great solution for me. Give it a try, you might like it.
      If you don’t, then toss the celery lol

    • Amanda, I agree completely! cold weather = soup weather! it’s so nice to sit down w/ a bowl of hot soup – or curl up w/ a mug fill of creamy goodness… I think I need to go make a pot!

      Crazy or not, this was the first time I’ve made it from scratch. I’ve always before used a canned soup. I was really pleased with the flavor.

      I’ve just purchased my first can of coconut milk, I’ll bet you’re right and it would taste just fine. And a great solution for folks who aren’t lactose tolerant.
