Chicken Fajita Soup
Sometimes a friend says “You have got to try this recipe!” and you are amazed at how right they were! This Chicken Fajita soup is a great example.
This is one of those recipes. A friend pulled a piece of paper out of her pocket, thrust it in my hand and said those magic words. I read the title of the recipe and thought … “Ok, this might go somewhere.”
Let me tell you, it went straight to the top of my Favorite Soups List!
It’s a hearty soup. I like soup that you can really sink your teeth into. Soup that makes you feel like you’ve eaten something.
It’s a flavorful soup. This soup has the potential to be pretty spicy, if you want to load it up.
It’s a full meal. When you have protein, vegetables and dairy all in one bowl, you’ve got a meal.

Make It A Meal:
Serve with some nachos and small salad for lunch. Add a side of refried beans, some tacos and the salad for supper.
This soup goes really well with Taco Lasagna or Tomato & Corn Salad.
Variations:
Replace the black beans with kidney beans. Add some diced red peppers. Serve with hot sauce and jalapenos to turn up the heat. Top with sour cream.

Chicken Fajita Soup Recipe
Ingredients:
Boneless Chicken Breast, Cream of Chicken Soup, Corn, Water, Salsa, Black Beans, Green Pepper, Cilantro, Cumin, shredded Cheddar Cheese
Directions:
Cook and dice the chicken. Drain and rinse the black beans. Dice the green pepper. Mix all ingredients in a large saucepan. Heat until simmering. Serve.

Ingredients
- 1 lb Chicken Breasts
- 20 oz Cream Chicken Soup
- 2 cup Whole Kernel Corn
- 1 1/2 cup Water
- 1 cup Salsa
- 15 oz Black Beans
- 1 cup Green Pepper
- 1/2 tsp Cilantro
- 1 tsp Cumin
- 1 cup Cheddar Cheese
Instructions

Cook and dice the chicken.

Drain and rinse the black beans.

Mix all ingredients in a large saucepan.
