Garlic Lime Chicken
Sometimes I get tired of eating the same old things, week after week. Do you feel the same way?
I know, you’re probably thinking … but, Noel, you have new recipes all the time?!
Yes, I do. The problem is the rest of the menu … It seems like I have a set of recipes that are in a rotation for serving.
It’s not on the same scale as those 1950s cartoons that say …”Wednesday, meatloaf. Thursday, casserole.” but it does seem like we have a regular set of dishes that we eat over and over.
I was feeling like trying a new dish this week. So I went on a search for something new that wasn’t going to be time consuming or expensive. (We’re on a budget here, you know.)
I found a crock pot recipe for Garlic Lime Chicken at a website that I check now and then for ideas. Over the Big Moon has a whole collection of freezer meals that are very budget friendly.
This recipe caught my eye, and so it went on the shopping list and then the menu!
Garlic Lime Chicken (Source)
6-8 Bone-In Chicken Thighs
1 c Soy Sauce
1/2 c Lime Juice
2 TB Worcestershire Sauce
4 Garlic Cloves, Minced
1 tsp Dry Mustard
1 tsp Ground Pepper
2 TB Cornstarch
Clean and trim chicken and split between two Gallon Zip top bags. Do not worry about getting all the fat off. They are perfect for the crock-pot because the fat melts off of them and by the time they are done they fall right off the bone. If you prefer chicken breasts, you can use them.
Mix wet ingredients and seasonings and pour over chicken. Then seal, label and freeze flat.
