Cheesy Cheese Ravioli Recipe
Some days I just want a simple, filling meal. Usually those days are when we’ve been really busy and my mind just can’t come up with an idea for supper. This cheesy cheese ravioli is just what the doctor ordered!
I’m sure you’ve had those kind of days. Work is finally finished. Kids need picked up from one location and fed, before being taxied to the next activity. Homework will have to be fit in somewhere between activities. The dog needs put out. There are three bills in the mail that need looked at. One of the children has a dire need for laundry to be washed tonight so they can wear their favorite shirt to school tomorrow.
Those are the days that we want supper to be simple, fast, and filling. This recipe for cheesy ravioli meets all of those criteria. It’s also a nice twist on the traditional tomato based ravioli recipe. I used a cheddar cheese soup, however, you could use a nacho cheese sauce or an Alfredo sauce.
Mixed vegetables add some color and texture to this dish. Broccoli, cauliflower or your favorite vegetable would work well in place of the mixed vegetables.
Make It a Meal:
There’s nothing like good bread with pasta dishes. Serve this cheesy cheese ravioli with Savory Onion Bread or Parmesan Biscuit Bites. Add a Green Bean or Garden salad and you’ve got supper!

Variations:
Add diced chicken or ham to make this meal even heartier. If you’re not a mushroom fan, (like my daughter!) leave them out. Another variation is to exchange the mixed vegetables for a package of your favorite frozen vegetables.
Storage: Keeps up to one week in the refrigerator and four to six weeks in the freezer. Thaw before reheating.
